scoby like thing in my rice vinegar

ok, so it has been a reeeeeeeeallly long time since I have used the bottle of rice vinegar in my fridge and now there is something that looks like a gorgeous scoby in the bottle. Have you seen such a thing before and would you still use the vinegar? Is it a good thing?

Actually, I really wanted to use it, so I did and so far we all feel fine, but I am still curious to know what you think. I wish I had a scoby that looked as healthy as the thing in this bottle.

Scobies in vinegar are called "mother of vinegar". That's why Bragg's acv says "with the mother".
