Need meal ideas for picky eater/texture issues

my ds is 18 months old and only eats a handful of foods.
his favorites are:
*american cheese
*bread and butter
*yogurt
*string cheese
*crackers
*pears
*pizza
*macaroni and cheese

i can get him to eat other foods by mixing it into yogurt (ie. applesauce, bananas, pureed squash, sweet potatoes, etc.), tomato sauce, mac and cheese, or baking it into a muffin. that being said, i'm really running out of ideas here!! yesterday, his meals consisted of a banana muffin for breakfast, grilled cheese (w/ squash puree) for lunch and dinner was yogurt w/ sweet potatoes and a cheese quesadilla. i try offering him other foods, and he just throws it on the floor. every night, we serve him what we're eating and 9 times out of 10, he throws it, but i keep offering bc i know that's important. most nights he barely eats dinner. he's still nursing so i'm not worried about his nutrition too much. i'm just in a rut and i'm bored with his food preferences. i need some other suggestions of what i can try or other snack i can give. he loves carbs (bread, crackers, pasta-not so much), but i worry about his protein intake. i discovered he will eat eggs if it's disguised in a grilled cheese. sometimes he will eat almond butter, but not always. i would love to hear any suggestions!!

Except for the pears, it's all dairy and gluten. I'd be worried too. If he likes macaroni and cheese, can you do pasta with different sauces? What about meatballs? Sometimes if you do things in more fun ways, they're more likely to eat them. Sometimes I give the kids toothpicks to spear pineapple or strawberries. Or things to dip. My DD2 loves to dip carrots and celery in mashed avocado. My kids will dip almost any vegetable into ketchup. Soup? My kids always loved chasing noodles around in the broth and then drinking the broth.
