What did you(if you get to eat) and the family have for breakfast, snack, lunch, dinner, and everything in between yesterday?

Please share with me the yummy thing you got to :

I am trying to mix things up a bit for the menu planning next week and just figured I'd use some ideas from others. That and I'm hungry and just can not decide on what to snack on

Breakfast:
I had a bagel with cream cheese, onion slices and salami. And coffee.
Dh ate at work I think so I have no idea what that was.
The boys had bagels with tofutti and cinnamon toast.

Lunch:
I had leftover spaghetti and Doritos.
Dh again, ate at work.
DS1 had pepperoni pizza with no cheese.
DS2 ate at daycare and I don't know what that was.

Snacks:
I think they had some of ds1's leftover pizza.

Dinner:
I had chicken enchiladas and rice.
Dh, at work again.
Both boys ate some refried beans and tortilla chips and a few french fries.

Yesterday was a bad day. We had dinner out and neither kid was real hungry.

Breakfast: Leftover spicy chicken and baked beans (canned and not my homemade ones...sigh)

Snack: peanut butter and watermellon...though not together LOL

Lunch: Hummus (homemade w/ soaked and cooked chickpeas), whole wheat pita and red bell peppers. Lately, I've been craving red bell peppers and DD loves them.

Dinner: Chicken and mushrooms w/ noodles (not whole wheat, sadly).

Breakfast:

Decided to try this, and it was SO yummy!!!

BAKED EGGS in CREAM with SPINACH
Hands-on time: maybe 15 minutes
Time to table: maybe 45 minutes
Serves 4

Water for hot water bath
12 ounces fresh spinach, washed, dried, stems removed
1 cup cream
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 large eggs
Finishing salt such as fleur de sel or Maldon

Preheat oven to 375F. Bring water to boil for the hot water bath. Prep the spinach. Bring the cream, salt and pepper to a boil in a large non-stick skillet. Add the spinach and let cook, stirring a bit, for 2 - 3 minutes. (You want to retain the bright green color.) With tongs, divide spinach among four ramekins. Continue cooking the cream until it becomes very thick, then divide among the ramekins. (Prep ahead this far, even the night before for brunch. If so, you'll want to cover tightly and refrigerate, then return to room temperature before proceeding.)

If desired, with a spoon create a shallow depression in the spinach (I didn't but think it's a good idea), then carefully break an egg into the depression. Place the ramekins in a larger pan at least as tall as the ramekins and large enough there's room for water to flow. Fill the bigger pan with boiling water til it reaches about half the height of the ramekins.

Bake for 18 - 22 minutes (said the inspiring recipe, mine took nearly 30) until the whites are cooked. Top with a little finishing salt and serve immediately.

Ds1 had about half of his, and a banana.

Snack:

Crackers, cheese, meat, apple slices.

Lunch:

Giant salad with:
spinach
tomatoes
cucumber
red and yellow peppers
purple onion
ham
cheese
hard boiled egg

Dressing made with:
sourcream
cottage cheese
fresh garlic
onion powder, garlic powder, paprika, cayenne
lemon juice
parmesan cheese
spash of milk to thin it out a bit
Blended together

Ds1 ate the cheese, ham, tomato and cuc, a few peices of pepper...
Ds2 (9 mo) had banana

Snack:
I cut up extra veggies when making lunch, and served them and pita wedges with roasted red pepper hummus.

Dinner:
Homemade mac & cheese : I'd never made this before, but omg it was so good!!!

I cut up some bacon really really small, cooked it. Took it out of the pan, added butter to the pan, added flour and wisked. Added 3 cloves of diced up garlic. Added 1 1/2 cup of cream, 1/2 cup of milk and wisked until thickened. Added 2 cups of cheese slowly and wisked. Added about a tbsp of dijon mustard, salt and pepper. Threw in the macaroni noodles (which I'd already cooked) and put the whole thing in a buttered casserole dish, added cheddar on top and scallions and baked at 375 for 20 min. Ate and blissed out.

Tropical spinach salad:

Spinach
sliced strawberries
fresh pinapple

Dressing:
Vanilla yogurt
lemon juice
shredded coconut
half a can of pinapple and juices or 1/2 cup of fresh pinapple
Blend everything.

I think it tastes like that ambrosia marshmallow salad, but it's way way healthier!!!

Breakfast: Homemade blueberry muffins with honeydew melon chunks.

Snack: Grapes, cheese crackers, rolled ham slices. Baby had peach puffs.

Lunch: Grilled chicken, zucchini/yellow squash with onion, garlic & fresh parsley drizzled with olive oil and grilled in foil, Annie's mac&cheese for the kids, pineapple slices.

Snack: peanut butter on apples. Baby had graham crackers.

Dinner: Diced chicken from lunch on tortillas with cheddar-jack cheese and guacamole (basically, quesadillas) with my fresh cilantro, baby spinach leaves/sliced cherry tomatoes with ranch, basmati rice with Smart Balance (no butter here, I have cholesterol issues ) and soy sauce.

Dessert: Strawberries with whipped cream.

The baby usually has whatever I can puree in my food processor from the main meal, or something from the previous meal if I had enough left (like with the quesadillas - it's a bit hard to puree those, LOL!). I used to give him organic jarred baby food, but he really prefers table food... more flavor, I guess. He's such a little piglet, anyway!

Tonight I'm using the rest of the diced chicken and stuffing zucchini that, and a recipe I have that includes rice, parsley, garlic, onions, cheese, etc. Originally calls for sausage but I'm doing the chicken since I have so much left. :
