What did you eat? (plz share)

x-post...I should have posted the question here because I am looking for what was eating in 24hrs eating ideas with nutritional balanced foods.

Therefore, the questions here are:
What does your family eat within 24 hours on a typical day (i.e. yesterday; breakfast, lunch, dinner, and snacks)?
What was the food cooked in?
Do you get in all your nutrition?

Please share with me the yummy thing you got to :

I am trying to mix things up a bit for the menu planning next week and just figured I'd use some ideas from others.

Here is what we ate yesterday. I don't know if we are getting in all our nutrition. We try to eat green veggies several times per day. To save money, we rarely eat meat 2x per day, but yesterday was the exception. I didn't use bone broth in anything yesterday, but if we have rice or soup, we usually have bone broth. With ground meat, we add in pastured organ meat. We cook in cast iron, stainless steal, glass, and ceramic.

BREAKFAST
3 pastured eggs fried in butter
cherries
sourdough rye toast w/ grass-fed butter


SANCK
soaked, dehydrated almonds
blackberries
kombucha

LUNCH
pastured pork w/ blackstrap molasses BBQ sauce roasted in cast iron
spinach
mango
soaked, dehydrated almonds
raw pickled okra

SNACK
nori
raw cheese

SNACK
peanut butter, raw kefir, raw honey

DINNER
tuna salad
-mayo
-apple
-Bubbies dill pickles
soudough rye toast
spinach w/ raw apple cider vinegar and olive oil

Breakfast: Pastured Egg Scramble with Raw Milk Feta, Spinach, Tomatoes, Pastured Pork Sausage and Raw Milk to Drink
Lunch: Miso Soup made with Dashi, Scallions, Shrimp, Wakame and Buckwheat Noodles and Mango
Supper: Pot Roast, Sweet Potato, Mixed Green Salad, Real Sauerkraut and Apricot Compote
Snacks: Apples, Carrots, Yogurt Cheese and Kombucha

Today was light on the veggies: we usually have much more. I cook in earthenware, stainless steel or cast iron.

I posted in nutrition but thought I'd post here too since we loosely follow tf.

Breakfast:
Decided to try this, and it was SO yummy!!!

BAKED EGGS in CREAM with SPINACH
Hands-on time: maybe 15 minutes
Time to table: maybe 45 minutes
Serves 4

Water for hot water bath
12 ounces fresh spinach, washed, dried, stems removed
1 cup cream
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
4 large eggs
Sea salt for finishing

Preheat oven to 375F. Bring water to boil for the hot water bath. Prep the spinach. Bring the cream, salt and pepper to a boil in a large non-stick skillet. Add the spinach and let cook, stirring a bit, for 2 - 3 minutes. (You want to retain the bright green color.) With tongs, divide spinach among four ramekins. Continue cooking the cream until it becomes very thick, then divide among the ramekins. (Prep ahead this far, even the night before for brunch. If so, you'll want to cover tightly and refrigerate, then return to room temperature before proceeding.)

With a spoon create a shallow depression in the spinach, then carefully break an egg into the depression. Place the ramekins in a larger pan at least as tall as the ramekins and large enough there's room for water to flow. Fill the bigger pan with boiling water til it reaches about half the height of the ramekins.

Bake for 18 - 22 minutes (said the inspiring recipe, mine took nearly 30) until the whites are cooked. Top with a little finishing salt and serve immediately.

Ds1 had about half of his, and a banana.

Snack:

Crackers, cheese, meat, apple slices.

Lunch:

Giant salad with:
spinach
tomatoes
cucumber
red and yellow peppers
purple onion
ham
cheese
hard boiled egg

Dressing made with:
sourcream
cottage cheese
fresh garlic
onion powder, garlic powder, paprika, cayenne
lemon juice
parmesan cheese
spash of milk to thin it out a bit
Blended together

Ds1 ate the cheese, ham, tomato and cuc, a few peices of pepper...
Ds2 (9 mo) had banana

Snack:
I cut up extra veggies when making lunch, and served them and pita wedges with roasted red pepper hummus.

Dinner:
Homemade mac & cheese I'd never made this before, but omg it was so good!!!

I cut up some bacon really really small, cooked it. Took it out of the pan, added butter to the pan, added flour and wisked. Added 3 cloves of diced up garlic. Added 1 1/2 cup of cream, 1/2 cup of milk and wisked until thickened. Added 2 cups of cheese slowly and wisked. Added about a tbsp of dijon mustard, salt and pepper. Threw in the macaroni noodles (which I'd already cooked) and put the whole thing in a buttered casserole dish, added cheddar on top and scallions and baked at 375 for 20 min. Ate and blissed out.

Tropical spinach salad:

Spinach
sliced strawberries
fresh pinapple

Dressing:
Vanilla yogurt
lemon juice
shredded coconut
half a can of pinapple and juices or 1/2 cup of fresh pinapple
Blend everything.

Toasted pecans on top!

I think it tastes like that ambrosia marshmallow salad, but it's way way healthier!!!

Today:

Breakfast:

Green smoothie:
Frozen banana
frozen berries
1/4 cup of cream
juiced spinach, beet, parsley, apple, carrot.
ground flax

Snack:

cheese, banana dipped in peanutbutter, big glasses of milk

Lunch:

Bacon and eggs, veggies and hummus

Snack:

apples, cheese, turkey pepperoni

Dinner:

Chicken and shrimp quesadillas
Mexi-Salad

Spinach
grated cheese
big chunks of tomato and cucumber

Dressing:
Fresh pico de gallo mixed with sourcream and a bit of cream cheese and some milk to thin it out

I cook everything in cast iron or stainless steel.

Today:

Breakfast:
Teff-apple hot cereal (SO yum, per serving: 1/4 c teff, 1/2 c water, 2 TBLSP coconut milk, 1/2 chopped green apple, 1 TBLSP each butter and coconut oil, cinnamon, nutmeg, cloves, ginger and salt to taste), 2 scrambled eggs with hot sauce, chamomile tea
Snack:
Celery with almond butter
Lunch:
Sausage, bean and kale soup from NT (love it)
Snack:
Goat yogurt with strawberries, blueberries and stevia
Dinner:
Meatloaf patties (made with pastured ground beef and pork), quinoa with butter, broccoli with coconut oil and lemon juice
Dessert:
Pina colada smoothie (coconut milk, fresh pineapple, stevia)

Yesterday:
breakfast
DH: homemade English muffin with natural peanut butter and raw honey
DD2 and DS: hot buckwheat cereal with maple syrup and cinnamon
DD1: can't remember
me: a couple bites of saurkraut, rooibas tea with raw honey
lunch
DH: some leftovers from the freezer (at work)
DS: puffed millet cereal, grape juice, pear
DD1: can't remember what I packed her
DD2 and me: hard boiled eggs
dinner:
DD1: chicken bone broth w/ wheat noodles, lima beans
DD2: chicken bone broth w/ rice noodles, lima beans
DS: hamburger (intolerant to chicken), lima beans
me: lima beans, rice noodles, chicken cacciatore (used bone broth in it, canned tomatoes from my mother's garden, white wine, garlic, onion, olive oil)
DH: same as me but wheat noodles

After dinner, DH had a beer, and I had a pina colada (rum, coconut milk, pineapple juice, and maple syrup).

Today:
Breakfast
DS and DD2: hot buckwheat cereal with maple syrup and cinnamon
DH: homemade English muffin with natural peanut butter and raw honey
me: homemade gluten free granola with coconut milk and maple syrup, rooibas tea with raw honey
DD1: hard boiled egg sandwich on Italian bread (toasted) with butter

I'll probably have more granola for lunch since it was really good. DD2 will probably have eggs fried in coconut oil. DD1 packed her own lunch and I didn't see it. DS is having puffed millet cereal, grape juice, a peppermint patty (unsweetened chocolate, peppermint oil, raw honey), and something else I can't remember. DH took the leftover chicken cacciatore for lunch. This is pork day, but I think we're having leftovers today and pork day will be tomorrow, starting with sweet potato-bacon hash.

Today we ate...
Breakfast
Beet kvass this batch actually got fizzy I love it
Soaked steel cut oats with coconut oil, raw honey and raw cream
DD1 has almond meal pancakes with lots of butter and some banana slices

Lunch
leftover chicken curry with lot of veggies from NT and rice with a pear. We normally try to not eat so many grains.
DD1 fried liverwurst with raw cheese and cooked peas with butter and some kombucha
DD2 had a little bit of chicken liver pate

Snack
raw cheese, homemade grape jello and some soaked cashews

Dinner
crockpot cabbage rolls made with ground beef and seasonings covered with tomatoe sauce, salad with strawberries and pumpkin seeds and balsamic vinegar and olive oil, mashed potatoes with lot of butter and raw milk and a sweet potato for DD1, and some fermented vegetable medley.

I've always been told and read that its not that important to worry about getting all your nutrients in one day, but to make sure you get enough, through the week.

I keep skipping breakfast, which isn't a good idea, but here is what I ate yesterday:
a cheese sandwhich (real chedder, real sandwhich bread, no additives, but not sourdough, pastured butter, mustard with no additives, salt and pepper, and homemade vinegrette)
neiman ranch hamburger with mustard and heinz ketchup (not my usual ketchup, but I was a guest) on sourdough, grilled corn with butter and salt and pepper, and spinach salad with homemade vinegrette.

for "desert", cantalope, and a nostalgic additive filled thomas's english muffin with butter and additive free, but with real sugar jam.

I definitly need more nutrients on days like that, but mostly, I've done better than that lately.
