Grain free and I want some alfredo

What is alfredo good on aside from pasta and broccoli?

potatoes? i like pesto on potatoes.
peas?
I don't know if you want low carb, or just grain free. My suggestions are all pretty carb-y.

I could see it going good on a vegetable medley. Like lightly sauteed onions, with carrots (parboiled or not), maybe parboiled kale cut up and thrown in, and then some potatoes and peas. That's probably what I would do.

Man, I could have sore I responded. I was going to say spaghetti squash as well, or zuccini noodles, or those seatangle noodles!

Paula- I know on the allergy board Kathy uses sweet potato flour as a thickner all the time. I just use cornstarch as I am never that strict and we don't have issues w/ corn. Even when grain free I indulge as I don't notice any illeffects I theorize it is because of Native American ancestry, but I don't know.

Arrowroot and potato starch/flour are both non-grain thickeners available in most supermarkets. Potato starch/potato flour will have the best texture for Alfredo.

We love mesquite grilled chicken with alfredo and steamed broccoli I would think spaghetti squash would be pretty good too. We really like my alfredo recipe it is a half cup cream, half cup butter and melt in a pan and simmer for 6 minutes then take off burner and add 3/4 cup parmesan cheese add salt and pepper to taste with a sprinkle of parsley. This is soooo good. :

It's actually great on meatballs, esp with fried potatoes on the side, all drowning in yummy creaminess. ~~drool~~

I thought that authentic Alfredo sauce didn't have any thickener. Isn't it just made with heavy cream, butter, and Parmesan cheese?

ETA: Just checked and I'm mistaken; heavy cream is an Italian-American addition. The original recipe just used lots of butter and Parmesan.

Still... no thickener, either way.
