Ok so i decided i was going to make a large curd cottage cheese today from the recipe in a book called ``The Home Creamery``
Well i went to cut the curds after they sat around for 40mins and they were difficult (my knives suck) so anyways when the curds started to rise to the top they looked like Mozzarella cheese... its stringy and started to melt again when i was supposed to reheat it again...
So what did i do wrong
I am draining it now and think yup totally mozzarella cheese.. even though i cut the pieces they are back together and i can stretch them...
I will eat this too but what did i do
