Yes, heated it is just sugar. To obtain all the healthful enzymatic benefits of honey it should never be heated above 97º F, which is the hive temperature (bees flap their wings to keep their hives cool and will abandon their hives and honey if they cannot keep the temperature down). As the honey heats above 97º, the enzymes deteriorate, by 106º the honey has turned to sugar as the enzymes have been destoryed.
