QUICK! I need coconut oil help

I'm making strawberry bread and my recipe calls for 1 1/4 cups veg oil. I don't have any. Can I sub in coconut oil? I have the virgin, cold pressed and unrefined. If so, how much? The same amount as the recipe calls for?

It should work just fine and would be a heck of a lot better for you than vegetable oil. You'll need to melt it though (usually melts around 80 degrees).

Well, I think the bread turned out great. It's the perfect texture - nice and moist. The flavor is really nice too; a perfect balance of strawberries, cinammon and nuts. But I do have a question since I haven't cooked with coconut oil before. Is it normal to have that raw coconut aftertaste? I don't mind it really, but DH, who hates all thinks coconut, might notice. I'm wondering if I used to much of it? I probably used a cup (I'm not great with measuring - I'm more of an eyeballer!).

Yes, with the unrefined coconut oil, that is normal. To get rid of the coconut taste, you'd have to use refined CO (which doesn't have nearly as many health benefits).
