Too late to render tallow?

WE got a portion of a cow share in April. I got the suet, fully intending to render it, but my arm was in a cast at the time and my functioning in the kitchen was nil.

Now I'd like to render it, but I've read if you wait too long it can go rancid. How long is too long? Anyone versed enough to know?

That would be important, huh? It's been frozen in a deep freeze all this time.

You are fine for rendering that. It can be kept there indefinitely.

Yeah - in the freezer it's fine. It won't go rancid if it's kept cold. Now if it had been in the fridge, rancidity wouldn't have been the concern, it would be spoilage. Rancidity is only a concern at room/warm temps.
