What to do with Cottage Cheese?

What would you do if you have a big container of cottage cheese that needed to be used up in the next couple of days?

I would probably consume large volumes of cottage cheese and apple butter, but that may not in reality be the best or healthiest option around.

I was going to suggest lasagna too, but that's the only way I like cottage cheese.

I actually prefer cottage cheese mixed with parm cheese in place of ricotta in mancotti and lasagna. :

I also like it mixed with whole wheat noodles and a little parm.

But my fave use of cottage cheese is with fresh fruit cut on top and some granola or almonds on top. Maybe a drizzle of honey too. Yummy breakfast.

Mix in some chopped radishes and some snipped chives too, if you have some on hand. Yummy!

OOoo OOooo... you guys are totally gonna think this sounds weird but it's actually delicious! Find your favorite low fat chips of any variety. Take said chip, scoop up some cottage cheese, and enjoy! Cottage cheese is the best chip dip! My dad was the one who first discovered this combo... and ever since we're the crazy family that dips chips in cottage cheese!

I like to blend it smooth and replace half or more of the mayo or sourcream in a dip or creamy salad dressing. You can't tell at all, and you've added so much protein and healthy fat to the recipe!

This also works for creamy sauces. I often add blended up cottage cheese to my cream cheese sauce that goes in my enchilladas, pasta sauces etc.

Yum! I've never been able to stomach it with fruit or sweet stuff for some reason!?!

My fave is adding it mixed with spinach to my spaghetti squash lasagne!

Not personally a fan, but my Mom always liked to add fresh tomatoes or peaches to cottage cheese.

Our chickens eat up our leftover or about to be tossed cottage cheese. They go nuts for it!

High protein pancakes-

But you can mix around ingredients depending on your family's preferences (oatmeal instead of flour, butter or coconut oil instead of veg oil, leave out the Splenda, etc.)

Top with maple syrup, fruit, whatever...

REally good with very ripe tomatoes and/or tossed onto a green salad - BUT the key for me is to add salt and pepper! It is a little bland without but a pinch of salt really brings out the flavor.

This is one of my favorite snacks EVER!! I stir some dill in with the cottage cheese and then snack away!

I also have a really interesting broccoli cottage cheese waffle recipe in a cookbook here. If it sounds interesting, let me know and I can post it.

Make a dip/salad. Add a few drops of honey or a bit of Sucanat, a good amount of chopped fresh chives and freshly cracked black pepper.
Taste, and add a bit more honey/sucanat if need be.
