What’s your favorite hummus recipe?

I usually just buy cedars or whatever else looks good… but after having some homemade, fresh hummus from a restaurant I just can’t go back to store bought! The hummus was pretty basic, garlic hummus… but I don’t know, it was just SO crazy delicious and flavorful! And really a lot thicker than what I usually have which I loved! Oh man, it was so awesome!

I know they won’t share their recipe, so I’ll just ask here for yummy recipes.

So whatcha got?

This is really basic, you could add things like parsley, cayenne, cumin, roasted red peppers or whatever to flavor it differently.

3 c cooked chickpeas
garlic to taste (I use 4 cloves or so)
salt to taste (usually about 3/4 tsp, depends on whether your tahini has salt, too)
6 Tbs tahini
6 Tbs lemon juice

Whiz this about in your food processor. If you like the consistency then you are good to go. This is a too thick for my taste so while the food processor is on I add extra virgin olive oil to get the consistency I want. :

That is pretty much what I do, but I just guesstimate amounts- I love to put paprika on the top when it is done.

I pretty much do the same as above also.

The key, for me, is lots of tahini. It really "makes" the hummus.

I'll chime in and say I do the chickpeas, tahini, lemon juice, garlic combo too. You really can't screw it up and it always comes out so yummy. I second the idea of sprinkling paprikia on top when it's done.

I have the basic version too - some days I add roasted red peppers or sun dried tomatoes, for a different flavor.

Do you all use canned chickpeas? That's the only way I know of them coming. Can you buy them dried? We go through a ton of hummus. I'm thinking making our own might save some money?

It is so totally commercial, but I'm addicted to the Sabra supremely spicy hummus. It is super expensive though, so I normally buy the Trader Joes organic stuff.

I rarely if ever buy canned. It is so much cheaper and healthier to buy the dried and cook them yourself. It takes a little more prep, but really not that much more. You can cook a bunch at a time and freeze them so they are ready to go

I personally love hummus without tahini, but with a good amount of oil instead. Very creamy.

ew, i really hate store bought hummus!

i don't have a food processor so i have been making hummus with a fork. i use dried chickpeas, tahini, olive oil, garlic, salt and lemon juice. i like the texture it gets with the fork. i might even like it better than the smooth food processor texture!

My favorite by far is the "Lighter Hummus (with dairy)" on this page. : I've tried so many different recipes trying to find one I really liked that didn't have tahini in it (don't care for it, usually) and this is it for me. I use a 6 oz container of greek yogurt so it's nice and thick.

Same here. My dh is middle eastern and while most people think it has to have tahini to be "authentic", that is decidedly untrue. There are as many authentic recipes as there are cooks in the Mediterranean countries. Our favorite is chick peas, garlic, salt, pepper, and olive oil and an acid. Heavy on the garlic.

I use chicken or veggie broth in mine. I also only ever make it with roasted red peppers. Otherwise, ours is the basic recipe as mentioned above.

I've come to think that the store bought stuff is waaaaay too salty for my tastes.
