Once again, I've got chicken breasts and no motivation or imagination

What should I do with these suckers tonight ladies?

How bout a chicken around the world:


My creation:
Creamy spicy chicken

Steam some rice.
Cut up bacon really small. Cook bacon. Remove bacon from pan.
Cook 2 cubed chicken breasts in bacon fat, and feel free to season with garlic and onion powder, salt and pepper. Add onion diced really small and lots of garlic. Don’t cook the chicken or onion/garlic all the way. Add 1 cup cream ¼ cup white wine, ¼ cup of chicken stock and 1/2 tbsp thyme and salt and pepper and allow cream to come to a boil. Re-add the bacon and some diced jalapenos and pop entire fry pan uncovered into 350 degree oven for 15-20 min. Cream should thicken slightly.

Chicken Tikka
* 1 1/2 lbs boneless skinless chicken, cut in 1 inch cubes

Marinade

* 1 cup plain yogurt
* 2 tablespoons lemon juice
* 2 teaspoons ground cumin
* 2 teaspoons ground red pepper
* 2 teaspoons black pepper
* 1 teaspoon cinnamon
* 1 teaspoon salt
* 1 piece minced ginger (1 inch long)
* 6 bamboo skewers

Sauce

* 1 tablespoon unsalted butter
* 2 garlic cloves, minced
* 1 jalapeno, minced
* 2 teaspoons ground coriander
* 1 teaspoon ground cumin
* 1 teaspoon paprika
* 1 teaspoon garam masala (buy in Indian market)
* 1/2 teaspoon salt
* 1 (8 ounce) can tomato sauce
* 1 cup whipping cream
* 1/4 cup chopped fresh cilantro

1. Soak bamboo skewers in water.
2. For sauce, melt butter on medium heat.
3. Add garlic& jalapeno; cook 1 minute.
4. Stir in coriander, cumin, paprika, garam masala& salt.
5. Stir in tomato sauce.
6. Simmer 15 minutes.
7. Stir in cream; simmer to thicken- about 5 minutes.
8. Thread chicken on skewers, and marinate (in the refrigerator) for an hour or so.
9. Discard marinade.
10. Grill or broil chicken, turning occasionally, to cook through- about 8 minutes.
11. Remove chicken from skewers; add to sauce.
12. Simmer 5 minutes.
13. Garnish with cilantro Serve with basmati rice, naan or pita bread.
14. Note: You can make your own garam masala.
15. McCormick also makes garam masala; it's available in super markets.

General Tso's Chicken

SAUCE:
1/4 cup cornstarch
2 TBSP. water
3/4 tsp minced fresh ginger
or 1/2 tsp ground ginger
1/2 tsp minced garlic
3/8 cup sugar
1/4 cup soy sauce
1 cup chicken broth
2 TBSP white vinegar
2 TBSP sherry or white wine

Put everything in a big jar, put the lid on, and shake it up real well. Set aside.

MEAT:
1/2 pound bonless chicken, cut into chuncks
1 egg, beaten
1/2 cup cornstarch
1 cup sliced green onions (or regular onions, tastes just as wonderful just not quite as pretty)
2-4 jalapenos (We like it HOT so use 4+)

Place chicken and egg in a zip lock bag and shake to coat chicken evenly. Add cornstarch and mix until chicken is evenly covered. Deep fry chicken at 350 degrees until crispy. Drain.

Heat 1 TBSP of oil in a skillet. Add onions and peppers and stir fry for 30+ seconds. Add sauce mixture. Cook and stir until thick. Add chicken and cook just long enough to reheat through.

Chicken Normandy...it involves a decadent sauce of cooked apples, celery and onion, blended with cream, egg yolks and brandy. If that sounds interesting, I'll find you the recipe.

It is time-consuming. I only make it about 3-4 times a year....

Are they bone-in or boneless? If they are bone-in, you could bake them in honey and orange juice. Easy and yummy. If they are boneless, you could do stir-fry. (Cut chicken up and marinate in honey, soy sauce, minced garlic, chopped green onions and a dash of ground ginger; then stir fry and serve with rice and a veggie.)

Oh - that looks delicious - i am defnitely making that the next time I make chicken - thanks

If you're feeling lazy, just cut them into patties, bread and fry them, then place on buns with swiss cheese, lettuce, tomato and bacon or whatever else you fancy. That's what I did today for lunch, chicken sandwiches.
