Favorite Veggies For Grilling

We're planning on doing a bunch of grilling this weekend and I'm looking for some fun veggies to throw on the grill. I'm going to the Farmers Market and hoping to pick up some fun veggies we haven't done before. So far we've grilled: Peppers, corn, mushrooms, garlic, onions. What other veggies are great on the grill?
and : to any who feel like including veggie marinades and or spice/seasoning recomendations!

Not the healthiest 'vegetable,' but potatoes grilled are really good. We slice them really thin, toss with salt, pepper and olive oil, then throw them in our grill basket and cook till done. Yummy.

Also yummy is taking a Vidalia onion, cutting it into quarters or eights but keeping it all together in its onion shape, sprinkling it with olive oil and salt and pepper (and any other spices you want). Then you wrap the whole thing in aluminum foil and throw on the grill for a long time.

Our usual is throwing cut up veggies (peppers, onions, carrots, whatever else we have) in the grill basket with olive oil and salt and pepper and cooking till done.

Asparagus works well too.

I LOVE my grill basket.

I like all the ones mentioned so far!

Other ones I like that haven't been mentioned: zuchini and eggplant.

Seasoning/marinade: I prefer to stick with oil, salt and pepper - let the natural flavour of the veggies shine!!

How about grilling fruit for dessert too? I've seen pineapple grilled before, though I've never tried it. Peaches, pears or figs would be nice too. With a little dollop of ice cream of course.

A grill basket! Now I must get one! I've seen them in the store and been tempted but now I'm getting one for sure.

SophieAnn I've heard of pineapple before but now I'm thinking about exploring with the others.
I thought about eggplant too...

asparagus
portobello mushrooms drizzled w/ balsamic vinegar

pineapple rings or spears are beyond delicious off the grill

peaches and plums, too; cut them in half, remove the pit, grill on both sides

YUM! That sounds sooo good!
We've done the portobello mushroom thing before but fruit is an all new with the exception of pineapple.

I'm just looking to change things up a bit - try something new.

Sweet potatoes!! We love these when it gets closer to the fall....and often times during the summer, too.: I boil them in their skins until just fork tender, then remove the skin and slice them in pretty thick rounds, drizzle with oil, salt & pepper and throw them on the grill for a couple few minutes per side (until they get some nice grill marks). To die for.

Tomatoes. We cut them in half and put some parmesan cheese and spice on them, lovely!
We also use onions a lot, just cut in rings and with some butter.
We've done broccoli too, and cauliflower, with parmesan.
And red peppers and corn are used a lot.

: YUM! : Thanks so much ladies! I'm now off to the Farmer's Market to get all kinds of lovely grilling veggies and perhaps some fruit as well what a lovely dessert idea! Thanks again! :
We'll be grillin' all summer so I'm certainly open to anything anyone wants to add that wasn't already mentioned!

small, new potatoes - mix together some butter/marg and capers, score the potato, rub with the butter mixture, wrap, and grill! Oh so yummy!

carrots - chop, put in foil with a little butter/marg, lemon juice, and thyme - and grill!

Portabellos are the best - drizzle with olive oil, balsamic vinegar, and thyme - let marinate - then grill.

Baby japanese eggplant, cut in half and doused with olive oil and kosher salt then grilled till soft is delicious!

I think bok choy would be great grilled. Romaine lettuce halves too, haven't tried it but I've seen it done on cooking shows and it looks like a great way to change up a salad. Scallions are also great grilled. And of course there's the classic corn on the cob.

Zucchini spears marinated in italian dressing and grilled are pretty yummy and very easy!

Tomato slices - coat in olive oil and sprinkle with salt, pepper, and italian seasoning. Grill on both sides. When almost done, top with mozarella or parmesan cheese and leave on the grill until it melts.

Asparagus - coat with olive oil, salt, and pepper and grill until browned. We like this with parmesan too.

Sweet potatoes - cook the same as asparagus but in disks and without the parm.

Zucchini - same as sweet potatoes

So what do you put the veggies in if you want to avoid aluminum? And I literally just returned a grilling basket because when we tried it, even after cutting the veggies larger, they kept falling out.
