salsify

so we planted some salsify... not knowing anything about it, but DS and i were intrigued, he liked the name, and i figured it would be a cool experiment... it seems its a root vegetable... anyone tasted it?? how do you use it?? how do i know when it's ready to harvest??

I grew it last year, but didn't end up using it. My roots never got bigger around than maybe a centimeter, and it just wasn't really worth it to use them for anything more than a little snack to try them. I hope yours grow well, and you get to use them!

Salsify is aka oyster plant due to it's oyster-like flavor. It is supposed to be good in any root-dishes, likes soups and stews. I'm trying it for the first time this year too in my to expand my repertoire of root-cellar veggies.

i've never grown it - did you grow it from seed or from a tuber?
it is yummy but a pain to prepare. you need to peel them, slice them - you can drop them into diluted lemon juice to keep them from browning - and then i like them sauteed with butter and garlic.
