need OAMC recipes without cream soups

I wasn't sure whether to put this here or in the frugality and finances forum.

The grocery store here in our little town just had chicken quarters on sale for 39 cents a pound. My husband brought home 20 pounds! It is in our basement fridge, waiting for me to do something with it. It is raw, not frozen.

Most of the OAMC chicken recipes I am finding call for lots of processed stuff - cream soups, dressing packets, etc. I prefer to avoid those kinds of things. I am wanting to find healthy, tasty recipes.

Does anyone have any suggestions for me?

Any recipe I want to try that has cream of yuck soup in it, I just sub half a block of cream cheese and some sour cream and some blended up cottage cheese, and seasonings. So much tastier, rich and creamy and delicious, with the added bonus of lots of protein from the cottage cheese!

As for seasoning packets, you can make your own seasons. Just google for great recipes. I make my own taco seasoning, ranch dressing, onion soup mix, etc.

What about doing dump chicken recipes? That is what I did when they had chicken on sale awhile ago. They are very easy to prepare so nice when you have a lot of chicken to go through.

http://www.recipezaar.com/cookbook.php?bookid=83959 This will get you started. You can use any kind of chicken with most of them. I use mostly chicken breasts but that is just because that is our preference. If you do a search of "dump chicken recipes" in google you will get a lot of links.

you can generally sub a cream sauce (butter + flour = roux, add in milk to make a white sauce) for cream of what ever soup. The salt will be off though since condensed soups tend to be very salty.

For chicken, I've frozen:

chicken tettrazini
chicken and dressing
chicken and rice casserole
marinated chicken (to grill)
chicken tortilla soup
chicken broth with chicken in it (to make chicken and dumplings fresh)
brunswick stew (this also has pork in it)

I ended up with:
2 bags of bbq dump chicken to thaw and grill
1 bag of lemon garlic dump chicken
1 bag of lime pepper dump chicken
10# of chicken quarters with a spice rub and chopped onions, frozen in 2 5# bags. When I am ready, I will thaw one bag and cook for supper that night, then I can use the cooked chicken for casseroles, chicken salad, soup, etc.

My husband requests that I come up with a more appetizing name than "dump chicken"!
