What to do with millet?

I bought some millet at the store to add more variety to ds's diet. Any ideas what I can do with it? (This is for my 14 month old.)

I use it like I would rice in hash, stirfry, to stuff peppers, to serve with chili or any bean/lentil dish, scrambled with eggs, etc.

ETA: I also grind it into flour and use it in gf baking/cooking.

Like the PP, I grind it into flour (just a coffee grinder works perfectly) and subsitute it for cornmeal to make baked polenta.

I do this to make "corn" bread for my corn allergic babe. I don't grind it into a flour, but only to the same texture as corn meal would be : My family (even the ones who can eat whatever they want) love cornbread made with millet :

I cook it up like porridge and eat it for breakfast!
