Black beans & Rice?

I have a ton of both and need to eat from the pantry this week. I'm looking for a good recipe to use some up. :

are your beans canned or dry? i like to take a can or two of black beans and mix them with a can of tomatoes or--even better--rotel! then heat them on the stove slowly.

if you're fixing them from dry, i don't really know.

i like to eat black beans with yellow (saffron) rice...here's how i do the rice:

saute an onion in butter or olive oil.

in the same pot, add rice (i use brown basmati rice) and broth of your choice.

add a few grains of saffron, and a little sea salt.

cook according to directions.

top with fresh chopped cilantro.

you can serve sour cream or cheese on the side if you eat that. we used to eat this EXACT meal all the time, with okra on the side

How about black bean burgers with rice pudding for dessert?

I've made the burger recipe several times and it's really yummy. I haven't tried this specific rice pudding recipe, but I've made similar ones several times with very good success.

For the black beans I like to saute a good amt of onions and garlic with a healthy amt of cumin. Add the beans and then add a generous amt of apple cider vinegar : Of course, s & p to taste. I love both pinto beans and black beans with apple cider vinegar.

They are dried. I told DS that they are pirate beans, so now he is all excited to have them for dinner tomorrow.
