cupcakes, carrot or muffin, recipes still wanted!

Still looking for a SUPER simple banana muffin or carrot cake/muffin cupcake recipe. Dairy and Soy free.

I found a frosting recipe so I'm good there.

This recipe is from elanaspantry, I'm scared to use the eggs, jsut because you shouldnt give eggs yet, right? He's 11 months.

How about cinnamon and nutmeg? And I would leave out walnuts too. Any ideas?????
I do NOT bake, so I haven't a clue how to substitute, ad lib etc... HELP me?!



Gluten Free Carrot Cake
3 cups blanched almond flour
2 teaspoons celtic sea salt
1 teaspoon baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
5 eggs
½ cup agave nectar
ÂĽ cup grapeseed oil
3 cups carrots, grated
1 cup raisins
1 cup walnuts

In a large bowl, combine almond flour, salt, baking soda, cinnamon and nutmeg
In a separate bowl, mix together eggs, agave and oil
Stir carrots, raisins and walnuts into wet ingredients
Stir wet ingredients into dry
Place batter into 2 well greased, round 9 Inch cake pans
Bake at 325° for 35 minutes
Cool to room temperature and spread with coconut cream frosting
Serve

I have become addicted to Kathy's carrot cake muffin/cupcakes these past couple of weeks. Even DH who eats everything said they tasted like carrot cake! http://www.kathysrecipebox.com/?p=151

I've found them both to be extremely versatile. I can use whatever fruit puree I want in either recipe. In the cranberry one, mashed banana can be used in place of applesauce and I've never actually used cranberry, I just fold in some frozen blueberries. I like that they don't have many too ingredients and are easy to sub (I don't use flax meal in the first recipe, just rice bran or even a little extra flour, for example).

Here's our favorite Vegan Banana Muffin recipe- it's not GF, but you didn't stipulate that! It is not low fat-- there is about 10g of fat PER MUFFIN, but they have this lovely moist bounciness to them that makes me eat them without thinking of the fat.

4 ripe bananas
1/2 c brown sugar or maple syrup (I prefer the syrup)
1/2 c veggie oil
1 tsp. cinnamon
1 tsp. cardamom
3/4 teaspoon salt
1 c whole wheat flour
1 1/2 c white flour
1 tsp baking powder
1 tsp baking soda

1. preheat oven to 350 degrees
2. grease or place cups in tin for 12 muffins.
3. mash bananas in a bowl.
4. add oil, sugar/syrup, salt, cinn, and cardamom
5. add flours and baking powder and mix.
6. spoon into muffin tins, bake for 20-25 minutes or until tops are brown and springy.

Delicious!!

No, I do not need Gluten Free. So would the recipe I posted be considered simple? I looked at the 3 others posted for me and they all had the same amount of ingredients.

Althea, could almond flour be subbed for the white and wheat?? I bought a huge bag of it.

I personally wouldn't do almond flour with an 11 month old, but you could call me paranoid cause I'm used to my 2 little allergy cases over here and that would have been disastrous for us! If you can do eggs and wheat I have this fantastic banana bread (could bake in muffin pan) that is really, really good! It was given to me by a friend and we have both heard nothing but rave reviews and everyone who tries it wants the recipe. Not suer what makes it so good, but it really is. Here it is:

Banana Bread

1 1/2 C flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/8 tsp salt
2 egg whites (could substitute 1 1/2 TBSP water, 1 TBSP oil, 1 tsp baking powder, mixed together)
2 ripe bananas mashed
3/4 C sugar
1/4 C oil (safflower is pretty safe with lo's IMHO)

Mix all the dry ingredients together. Mix all the wet ingredients in a separate bowl. Add wet to dry and mix well. For a bread loaf, bake at 350 for apx 50 minutes, or until golden and firm on top. For muffins, maybe try somewhere between 20-25 minutes, just a guess but probably somewhere in that neighborhood.

Anyone feeling adventerous could give this a try gluten free. I don't typically make it 'allergy safe' since my bizzare 8 yo doesn't like bananas, so won't touch banana bread! I'd love to know how it comes out though if anyone tries it.

Chocolate Banana Nut Muffins(GF/CF/EF/SF- Corn-Free and 100% Whole Grain )
3/4 c sorghum flour and 3/4 c buckwheat flour (I like the texture of these well- you could sub some brown rice for some, but I wouldn't use it for all of it)
1/4 c. oil- I use coconut (melted or olive- BUT not EVOO)
1/2 c. sweetner(I used rapadura)
1 ts. baking soda
1/4 ts. salt
2 heaping Tbs. cocoa
1 c. non-dairy milk
1 mushed banana(great way to use up those bananas going bad!)
1/2 c. nuts
1t. vanilla

Mix and cook on 400 about 15 minutes. Made 12 muffins. (I think the time is right I tried to time the last one I made) These make 12 pretty full cups.


Here is the cake recipe Wugmama posted(check the best allergen free cake post) w/ the modifications I made to make them banana nut muffins. Super, duper easy, made in one bowl. Made gf, but you can sub gluten flours if you wish. These were perfect.

One more question, the recipe above calls for 5 eggs (no eggs before one right?) What could I sub for the eggs?

In my somewhat limited experience, you can sub for one egg in a recipe, but no way will you be able to sub effectively for 5. So either you need to trial eggs first, or find a recipe that only needs 1-2 eggs and try the flax egg substitute.

I found several recipes searching for "eggless banana bread", here's one.

In the banana bread recipe I posted above it shows a substitue for 2 egg whites. It was baking powder, oil and water. Or you could use Energ egg replacer. Again, flax seed never worked for us cause both mine are allergic to seeds, I tried it a couple times and they got hives and excema

let us know how it goes but I'm pretty sure elana says not to sub other flours for the blanched almond flour--she makes their consistancy go perfectly with that kindof flour and people have bad results tryingto sub...also I wouldn't try to sub 5 eggs--that's why I can't do most of her recipes because they rely so much on eggs and I'd only sub an egg or two in a recipe--not five! imagine five flax eggs--yuck! good luck--I'd try some of the other recipes posted around here for your needs....if you do try elanas please let me know if it turns out--since then I'd be able to use it! good luck!

I made the cupcakes they were AMAZING. The frosting turned out more like a glaze but I'm sure I did something wrong. BUT, I gave DS about 1/2 a small muffin, 2 hours later a rash was forming. We called pedi and he said either almond flour or eggs was culprit. He's 11 months. Maybe it was too many new ingredients all at once?

Anyway, I looked at the recipe above but it had butter. I'm back to google. I feel badly, he really liked the muffin. His rash lasted about 6 hours, disappeared in the middle of the night...

Back to google for recipes!!!!

Can you try an egg substitute like flaxmeal + hot water or gelatin + water? Ener-g makes an egg replacer, too.

I guess for 5 eggs people were saying flax wouldnt be a good sub.
I have no experience with energ egg, I am willing to try it, what are the ingredients?

here's a GF/CF/EF recipe. It's quite tasty. My family really likes it:

Whisk together:

1 cup rice flour
1/3 cup coconut flour
3/4 tsp salt
1/2 tsp baking soda
1/4 tsp baking powder
1/2 tsp xanthum gum

In separate bowl eat until lightened in texture:

3 tbsp coconut oil
3 tbsp other baking oil (I use safflower)
<1/3 cup sucanat
<1/3 cup agave (I'm doing about 1/6th)

Beat in flour mixture until consistency of brown sugar. Then beat in:

2 eggs OR
6 tbsp water heated 30 sec. in microwave PLUS 2 tbsp ground flax (let sit for about a min)

Fold in 2 mushed bananas.

Bake 40-50 min. for a bread. I would guess muffins would be about 20-25.

OH yeah, I would sub that many eggs. I've tried tons of different cake and muffin recipes, though, and very few call for that many eggs. Those two I posted only called for one or two.
