What to do with lots of eggs....

More specifically the yolks.

My DH is obsessed with egg whites and whipping them up into all sorts of delicious meals. But since I hate to waste anything in the kitchen, I have him saving the yolks, only to forget we have them and then when I do remember them sitting there so lonely without their whites, I can't think of what else to do with them other than the usual scrambled eggs, etc.

Any ideas? Can I freeze them or would that ruin the consistency? I feel like there should be something interesting I could make with them .....but I am suffering from pregnancy brain & toddler exhaustion and can't really think of anything at the moment...

Any suggestions would be greatly appreciated!

they can be frozen, just add a little salt or a little sugar (like a small pinch) and label them for sweet or savory dishes.
If they're your own chickens i would just eat the whole egg. Hens on pasture have eggs with a lot of omegas, vitamin a and d, and good cholesteral.
If you're feeling a bit decadent try some creme brule.

Make custards, mayo, ice cream, there are all sorts of things... usually I have an abundance of whites. Worse comes to worst, scramble them with a few whole eggs and use them in a quiche, frittata, etc.

But if you want to keep them in the fridge for a few days, if they're intact cover them with water or oil to prevent the formation of a thick skin. If you want to freeze them, scramble them with a touch of water or oil first.

i would mix them with a few whole eggs and lots of veggies, cheese, etc for a nice quiche!

Egg yolks make a nice facial mask.
