i bought some organic dehydrated strawberries for my kids to munch on (because i was standing in line behind another mom and she was buying three containers and going on and on about how much her kids love them).

my kids were not impressed at all.

what else can i do with them? can i rehydrate them and bake with them??

put them in yogurt or cereal or eat them yourself!

Strawberry lemon muffins. I made some last week, yum. Use a blueberry muffin recipe but instead of blueberries use the dried strawberries, and add 1 TB lemon zest.

Dehydrated or freeze-dried?

Treat them like raisins if they're dehydrated. Add them to cookies, oatmeal, etc. Places where they can absorb some liquid, mostly.

If they're freeze-dried, I personally prefer to retain the crunch... but if you soak them in liquid, they should "melt" fairly nicely (like frozen defrosted berries do) - and be able to be added to things like smoothies.
