ISO Chocolate gelato recipe with caveats

I need a rich, chocolaty Chocolate Gelato recipe. It can only use milk, no cream or sour cream or whipped cream or heavy cream or evaporated milk, 1/2 and 1/2 or condensed milk.

It cannot have corn starch, corn syrup in it

I came across one a few years ago and, of course, cannot find it. I remember it had milk, eggs and a sugar simple syrup that I had to cook to a specific temperature. It was divine and I really want to make it again.

Anyone know of one? Most of the ones I can find have Milk and Cream in them.. or corn syrup..

I don't have any recipes, and I've never made gelato, but I have substituted a sugar syrup (half sugar, half water) for corn syrup in other recipes with good success.
