Cold lunches to pack for Dh?

My husband has a new job and schedule. He doesn't have any way to heat up food so most leftovers are out, and I really don't want to make turkey sandwiches every night. Any great cold lunch ideas?
Thanks!

Vegan Lunch Box - either the blog or the book. So inspiring!

Thermos of chili or stew or hearty soups? Maybe even Chowder?

Leftovers: Any rice or grain dish in a tortilla or pita w/spinach and "call it a wrap". Any meat on a whole-wheat bun w/lettuce & tomato and call it a manwich. Fooled my husband, anyway!

Google "lunchbox" and/or "bento" and you'll come up with hundreds of sites with ideas!

My DH refuses to heat up his lunch even though he could - he loves most leftovers cold. So don't rule them out on that count.

There are certain things like mashed potatoes that aren't that great cold (texture-wise), but meatloaf, leftover roast, roasted potates/veg, baked potato, steamed/sauteed veg, fried rice are all good cold.

I pack a tiffin with 1 container of leftovers and 1 container of snacks - at this time of year it's apricots, plums, cherries, blueberries, cheese. In the winter it's usually apples and PB, nuts, orange (cut up), cheese. And he always gets carrots there, too.

I just made chicken salad wraps yesterday for lunch.

It is chicken, parsley, cilantro, some red bell pepper, celery, pepper, olive oil (in order to use less mayo ) and a bit of mayo and then you wrap it in boston lettuce leaves. Without a ton of mayo it is a bit dry on bread but it is good on the lettuce.

Today I made spring rolls with cucumber, carrots, spinach, red bell peppers, shrimp and some plum sauce other things would be good like scallions, sprouts and such.

You could make some pasta salad. I like it just like you find at potlucks I put tomatoes, cucumbers, red bell pepper, black olives, broccoli, carrots, Italian dressing and I give dh and dd chedder in theirs but I can't eat cheese. You could add some chicken or pepperoni if you wanted.

Tortellini is good cold depending on what you put on it.

Pasta salad, totally forgot! My husband loves that. Also if you eat meat, sausage can be chopped up in it. Orzo is especially good in pasta salads but it's pricey as wheat flour and water goes...
