Salicylates and water kefir

We are removing salicylates and I want to introduce water kefir (dairy allergy) but are there salicylates in the water kefir brew? I plan on using sucunat as the sugar or should I use something else? We are already using a probiotic and I want the kefir to add even more beneficial bacteria to help our guts out.

I think the salicylates would come mostly from what you put in (some people use ginger, or raisins, or juice to grow their brew). I've heard you can use just maple syrup, that's no sals.
