Who wants to share their favorite? Particularly pate-type recipes, but anything goes!

I have no recipe for this. Just something my mom always made that we loved. Saute an onion and some mushrooms. Add the livers, and a little bit of water. Simmer until done. Season with cajun seasoning. Serve over rice. It's really, really good.
