Desperate!!! Need snack ideas for picky preschooler!!!!!!

Please help me!!!!! If I hear "I wanna snack, I wanna snack!" again, I swear I'm going to pull my hair out! I NEED snack ideas that are not convience crap (although I'm nearly there )!!!! He likes both sweet and salty things equally, I have one day (Sunday) which is our cooking/prep/baking day so I need recipes/ideas of tasty healthy treats to make and serve through-out the week. . . I was thinking of toasted soybeans with seasalt/or other mixed salt (need a recipe for that) or I don't know I'm at a loss. . . what do your little ones eat for snacks these days? And what recipes/resources do you have on hand?

Help me lovely mamas I need help!:

fruit muffins? (blueberry, apple, peach and strawberry/banana are our favs).

Trail mix (sesame sticks, seeds, nuts, dried fruit)

Popcorn varieties (sprinkle parm che or other toppings there was just a thread on this).

Fruit snacks (made from fruit leather you can make yourself and use cookie cutters or candy cutters from michaels to make fun shapes).

homemade cheese crackers (sprnkle cheese on a baking sheet and bake until melted, then when they cool pull them off).

When my older kids were that age, we went through a lot of Honey Whole Wheat Pretzels from Trader Joes.

Sometimes there's a place for convenience crap.

granola with dried fruits and/or salted nuts?

wheat crackers with cheese?

fresh berries (plain or with yogurt)?

carrot and celery sticks (plain or with nut butter/hummus/cream cheese)?

tortilla chips with salsa or hummus?

Ohhhh Awesome! Thanx so much guys!! My LO is getting so sick of the same things, and I'm just so clueless as of what to provide + I'm stuck in such a rut. My hubby has said no more fruit snacks (though I love the homemade version) and I'm starting to agree with him, no more junk!!!

fruit: melon balls, grapes, pineapple, apple slices, bananas, strawberries, blueberries
veggies: celery and carrot sticks dipped in mashed avocado
rice cakes with peanut butter
celery with peanut butterolives
popsicle molds with grape juice/water in them or smoothie
granola (plain or mixed with yogurt or coconut milk)
nuts
curried chickpeas (warm or cold)
olives

Sometimes I get around to cooking/baking actual snacks, but mostly not. I keep it simple, as we mostly just have fruit, nuts, dried fruit, yogurt and cheese around to snack on. Would that be their first choice of snack? Perhaps not, but that's all I'm providing so they eat it!

I actually do make smoothies once a day, and we do popcorn a lot...I guess I do prepare a few things, just not ahead of time.

I usually have some sort of packaged cracker in the pantry, like sourdough pretzels or Triscuits. Everyone likes both of those things, but they don't like them enough to gorge on them.

I like to make mini muffins, regular size muffins, or quick bread loafs.
Veggies and hummus (or whole wheat pitas)
Trail mix (dry cereal, raisins, dried cranberries or other fruit, almonds, pretzels)
I usually put a bowl of cut up fruit on the table when we wake up and DS will snack on it all morning. Strawberries, grapes, melon, apples, or whatever else we have on hand.
Sunflower seeds out of the shell are a huge hit. I buy them at Trader Joes.
Veggie Booty once in a while
Apple slices with peanut butter to dip them in
Almonds

Biscuits & Gravy and I are on the same page snack-wise.

When it comes to me making quick breads or muffins, I usually always add a big spoonful of molasses, cinnamon, and usually some (maybe 1/4 cup) ground flaxseed when the recipe doesn't call for it- these additions add some flavor, texture, and nutritional perks. I always use whole grain flour. Some people say they don't like the texture of whole grain muffins and breads: they complain that baked goods turn out to dry when using whole grain flour. I'm sure that I'm not the first person to discover this, but I have found that the trick to getting a moist, soft bread/muffin is to use a liquid sweetener (maple syrup, honey, etc.) rather than dry (sugar). It never fails! Just use 1/2 the measurement of liquid than the recipe calls for in sugar, i.e. if the recipes says "1 cup sugar," use 1/2 cup honey.


I have a great recipe that I found on The Whole Grain Gourmet. website. There are a lot of really good recipes- you should check it out! I know my LO is crazy about cookies, and these cookies are really good for him so I don't feel bad if he eats a few a day... or if I eat of few a day.

Healthy Oatmeal Cookies (with Honey)

Ingredients:

Dry ingredients

1 cup whole wheat flour (a pinch more depending on the moisture of the mix)
1 1/2 cups of Large Flake Rolled Oats (smaller flake is ok too)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 Tbsp Cinnamon (I actually use about 3 Tbsp--got to love cinnamon)
1/2 tsp Nutmeg (optional)
Wet ingredients

1/2 cup honey
1/2 cup oil (corn, grapeseed or olive) * you can also use some applesauce to replace some of the oil if you wish*
1 Tablespoon Molasses
1 egg (beat with 1 Tbsp Water)
1 tsp Vanilla
Yummy ingredients

1/2 cup raisins (1 cup for my Dad's batch)
1/2 cup walnuts (more for my Dad's)!!
Preparation:

In a large bowl, mix all the dry ingredients together.
In a medium bowl, mix all the wet ingredients together. Hint: when measuring out the honey, spray the measuring cup with oil or baking spray--your honey won't stick).
Mix the wet stuff with the dry stuff. Add the raisins and walnuts and mix. If the mixture seems too wet, add a bit of flour. If it isn't binding together very well, you may wish to add an egg white.
COOL the mix for 20 minutes in the fridge.
Preheat the oven to 335 degrees (lower temperature due to the honey in the recipe which will burn more easily).
Drop by teaspoonfuls onto your baking sheet (I recommend lining the baking sheet with parchment paper). Press down with a fork to ensure even cooking.
Bake for about 15 - 20 minutes or until golden on the bottom of the cookie. The cookies freeze very well and make a great snack! Enjoy.

This is a great tip! Thank you so much. We have tons of maple syrup from this spring when DH and DS helped our friends with their sugar bush.

Mama.Pajama, I do similar stuff to my bread/muffins. I always toss in some ground flaxseed and cinnamon. I'll also add a handful of oats and some applesauce for moisture. I sort of fly by the seat of my pants with this kind of thing. A handful of this and that. Nothing is ever the same. I'll have to try the liquid sweetener idea. I have some agave and always have maple syrup. DS loves molasses cookies, especially with lots of ginger, but I never thought to add it to my muffins. Good tips!
