crock pot pet peeve

OK so many crock pot recipes start out with, saute the veggies and meat or cook the pasta...if I had time to cook I wouldn't need the crock pot...where are the good recipes that involve putting all the stuff in the crock pot and turning it on?

Can anyone share?

I totally agree! I can generally use the recipe anyway, just omitting that step. I'm sure the flavor won't be as "rich", but the savings to my sanity are well worth it.
Not sure what to do about the pasta though...I still have to cook mine seperately.

I'm so lazy. I just buy the frozen crock pot meals where I put it all in and turn it on.

The lady made a resolution to use her crockpot every day for a year. She has now written a book and been on Rachel Ray. I believe all her recipes are gluten-free.

I never do the pre-crockpot sauteing. My family didn't seem to notice the difference.

Unfortunately, a child who shall remain nameless broke my crockpot lid for the second time. Why won't they make lids that fit crockpots for more than a year or two? So that we have to keep buying them?

Grrr.

twinmom I asked for a crock pot on freecycle just for the lid once. I really liked mine and didn't want to replace it and got this old model whose insert didn't even come out and switched the lids out. we have yet to dispose of the old one yet but its an idea...

For crockpotting with no extra steps:

Add extra liquid (stock, wine, water etc) and throw your rice or pasta in uncooked. Ground beef needs to be precooked so cook a butt load of ground beef and freeze in portions that can be chucked into the crock.

My fave crockpot cook book is

Not Your Mother's Slow Cooker Cookbook by Beth Hensperger and Julie Kaufmann.

That being said, many of them are multi step recipes so:

Here are some tried and true mother approved recipes:

Torilla casserole:

package of cream cheese cubed
1 cup sour cream
1 can green chilies and tomato
1 can of mushrooms and stems
1 can black beans
1 can corn
1/2 an onion diced
12 flour tortillas each cut into 12 wedges (I just stack them and cut them all at once)
3 to 4 cups cubed chicken breast
1 7 oz jar salsa
1 1/2 cups grated cheddar cheese
1/2 cup grated cheddar cheese
1 tsp cumin
2 tsp chili powder
1/2 tbsp garlic powder

Throw everything into the crockpot and cook on low for 6-8 hours.

Gently stir and sprinkle with remaining 1/2 cup of cheese. Cover and cok on low for 15-30 min. (This step is totally optional, if you are pressed for time, just let people sprinkle cheese on their own portions.)

Sweet Aromatic Chicken and rice:

1 cup coconut milk
2 cup chicken stock
8 chicken thighs
1/4 cup brown sugar
2 tbsp soy sauce
1 tbsp vinegar
1/8 tsp ground cloves
1/4 tsp ginger
3 garlic cloves minced
1/2 onion diced
2 cups rice, uncooked

Grease crock pot
pour in liquid, and then lay thighs down and put everything else on top.
Cover. Cook on Low 9-10 hours, high for 6 hours.

Barbecued chicken:

2 lbs. chicken pieces (I like thighs)
1/4 cup flour
1 1/2 cups bbq sauce
2 cups stock (or 1 1/2 cup stock, 1/2 cup wine)
1/2 onion cut into big petals
2 garlic cloves minced
green pepper, yellow pepper (whatever you've got)
zucchini cut nice and thick

stick chicken in a bowl and throw in the flour. Toss the chicken into the flour and transfer to slow cooker.
Put everything else on top of chicken.
Cover. Cook on low 5 hours.

Spanish rice:

2 lbs ground beef (browned)
2 onions, diced
4 cloves garlic, minced
green peppers, chopped
28 oz can tomatoes
8 oz can tomato sauce
1 1/2 cups vegetable stock
2 1/2 tsp chili powder
2 tsp salt
2 tsp worcestershire sauce
1 1/2 cups rice, uncooked

Combine all ing. Cover. Cook on Low 9-10 hours, or high for 6 hours.

I have a million... but meh... I mostly use mine for soups and stews. One pot meal type dishes.
