TF muffins?

My son LOVES to eat muffins. Does anybody have a good TF muffin recipe? I've tried the basic muffins in NT and it was ok but kinda dry and ds didn't eat that many of them.

Also what are some good healthy add ins? I need to use sneaky nutrition because he is pretty picky. I usually make them with coconut oil. I use WW flour, no white. Extra egg. Flax seeds. What else could I add?

I have a recipe for pumpkin muffins that he really loves. Maybe if there are no good new recipe suggestions you could help me tf it.

The very best TF muffins I have managed to make are based off this recipe. They're so good I make them nearly every week. DH and DS both love them.

Soaking flour never gave me great results. I bought some of the sprouted whole wheat flour from To Your Health, and it's PERFECT for this.

The only change I make is using Rapadura instead of the brown sugar. Only 1/4 cup for the whole batch, and they're still very flavorful. I also do skip the brown sugar/nut topping. You can put in raisins like they say or sub unsweetened dried cherries or fresh or frozen blueberries. Every tweak I've made has turned out wonderfully!
