Sweet Potatoes?

I got a bunch of sweet potatoes from the Food Pantry. Suggestions? I do make mashed sweet potatoes (witch brown sugar and butter).

I thought about that, but its 97 degrees with heat index of 100. So I was trying to avoid the oven.

We make sweet potato chips and fries on the grill. : Coat them with olive oil, salt, and pepper (we just shake them up with it in a closed container) and put the slices straight on the grill and the fries in a grill pan. Make the chips about a quarter inch thick.

I steam my sweet potato. I eat the chunks with just butter. I also freeze chunks to throw into any pasta dish, like homemade pasta and cheese. Gives it nice creamy texture and sweet flavour.

One of my favorite recipes is to mash up sweet potatoes and mix with black beans and cilantro to stuff in burritos.

I puree it and use it in muffins and breads.

I do sweet potato wedges also - either in the oven or bbq works well. I do like to steam them a bit first so it doesn't take as long though. I'm a big fan of savoury spices on these, to balance the sweetness of the potatoes.

I cook them and cube them, then add them to chili. I know it sounds odd, but chili over sweet potatos is really good. It get sweet potatos into my kids anyway! Also, sweet potato pie in a whole whaat crust is so good.

Not long ago I had a really awesome spinach wrap with hummus and roasted veggies (sweet potatoes, peppers, zucchini, yellow squash).

I also love sweet potato burritos.

And I often just eat them baked with a variety of savory toppings. Melted cheese and bacon being my favorite.

We eat them a lot with eggs for breakfast, cubed, coated in ghee (or butter) and cooked in the toaster oven. Could bake one the night before & keep in the fridge and then grate and cook sweet potato hash browns too.

And sweet potato pancakes are yummy!

We use them in stew, sweet potato fries, sweet potato-bacon hash (super good for breakfast).

Its not oven-free, but roasted/baked sweet potatos are the best! (Just remember to poke some holes, like with a regular potato. I forgot once, and it exploded). Serve them with lots of butter and salt. Seriously, delicious. (the skins can either be eaten with butter as is, or fried up.)

yes!!! I am making 20 of these for the freezer today! :

sweet potato nachos are yummy too!!! just layer with refried black beans, toms, green onions, sour ream, jalapenos and salsa. mmmm.

sweat potato enchiladas are also easy and good.

I guess I really just love the combo of black beans and sweet potatoes. hehe!

Sweet Potato Salad

3 large sweet potatoes
1 bunch of scallions, trimmed and thinly sliced
2 celery stalks,chopped
1/4 c. minced fresh parsley
1/3 c. mayo
1/4 c. buttermilk
2 Tbsp. fresh lemon juice
2 teaspoons dijon mustard
salt and pepper to taste

Cut sweet potatoes into bite-sized chunks and steam over boiling water for 10 min. or until tender. Let cool and then transfer to a large bowl. Add scallions,celery, and parsley.
Whisk mayo,buttermilk,lemon juice, and mustard until creamy. Pour over potato mixture and gently toss to mix. Season with salt and pepper to taste. Refrigerate until ready to serve. To jazz up flavor, add a Tbsp. of sweet pickle relish and several halved cherry tomatoes or both.:

i just fried up a pan of sweet potatoes with jalapenos and garlic- i think it was the best sweet potatoes i have ever had! it was so delicious!

Mom used to put the toaster oven outside on hot days.

Anyhow, we made sweet potato and black bean enchiladas last night. :
