Hot Bacon Dressing

Here's my recipe...do you think I could sub honey to get rid of the sugar? How much should I sub?

8 slices bacon
1 c. sugar
3 tsp. arrowroot
1/2 tsp salt
1/4 c. water
1/2 c. vinegar

Fry diced bacon, drain and set aside. Combine dry ingredients. Add water and vinegar slowly, whisking constantly. Put bacon and vinegar mixture in pan over medium heat. When hot, remove from heat and add arrowroot. Whisk to thicken.

Remove the water and sub maybe 1/4-1/2 c of honey for the sugar and water. You may not need nearly as much arrowroot, since the honey is naturally thicker.
