Hi! The copy of Nourishing Traditions that I ordered from Amazon shipped late so our grass-fed beef, pork, and chicken will arrive before the cookbook. DH is still a little unsure that the new beef will be any better than Costco beef so I was hoping to have the cookbook so I could wow him with the first taste of grass-fed beef.

Does anyone have an amazing recipe to share?

Oh, I have a variety being delivered... here's the current order:

Boneless Chuck Roast
Lean Ground Beef
Premium Ground Beef
Rib Eye Steak
Rump Roast
Sirloin Flap Steak
Sirloin Tip Roast
Stew Meat
Top Round Roast
Ground Pork
Hot Pork Sausage
Italian Sausage - Links
Mild Pork Sausage
Pork Country Style Ribs
Pork Shoulder
Wood Smoked & Salted Ham Hocks
Boneless Chicken Thighs
Chicken Sausage
Free Range Eggs
Cheddar Cheese
Colby Cheese
Southwest Leicester Cheese

We grill most of our beef. Just remember that it needs grilled for less time and on a lower heat as it will cook faster.

My favorite marinade for steak:

1 cup soya sauce
1/4 cup maple syrup
1/4 cup balsamic vinegar
1/4 red wine
6 cloves of garlic rough chopped
1/2 onion rough chopped
lots of black pepper

Marinate the steaks overnight in this, and it is SSSSSOOOOOOOOO delicious!!!

Absolutely the most important thing (IMHO) is to pull the beef off the grill when it hits 130 degrees (135 at the most!). Any more than that and it's tough and not nearly as pleasant to eat. You might also check out the book Grassfed Gourmet. Lots of good info in there.
