Favorite Summertime Treats

I thought it would be fun to all share our favorite treats that come along with summertime.

We're big fans of the grill in the summer because it is just too hot to run the stove. Here's what we did today...

Sliced apricots and drizzled them with honey. Threw them on the grill to caramelize and then served hot over homemade vanilla ice cream.

Sweet potato fries and chips are also a favorite for us and we've started making them on the grill too. We shake them in a container with olive oil, salt, pepper, and paprika and then throw them in a grill pan. Yum!

I just love summer foods! :

I just picked a bunch of rhubarb. I cooked some with strawberries and mayple syrup and a squeeze of lemon. We've been eating that on yogurt, whipped cream and angel food cake, banana splits etc.

I also love raw rhubarb. Sour and so yummy! I`m going to try some in a smoothie tomorrow.

Giant salads are a fave around here when we don't even want to grill! lol Everything is so fresh.

fruit, and grilled corn. fresh peaches, nectarines, plums, ollalieberries, raspberries, blackberries....

and of course, tomatoes. I don't eat tomatoes (other than in cooked things, like spagetti sauce, from canned tomatos) out of season, so when those first in season heirloom tomatos come around... what a treat. Soon, when they are more in season, I'll put them in everything. For now, being on the edge of season, I'm enjoying one or two covering in olive oil, balsamic vinegar, salt and BASIL. Ah how I missed basil.

Corn doesnt come locally here till way later, but I loooove grilled corn. DH found a recipe where you put butter, lime juice, chili powder and salt on the corn, then either put the husk back up or wrap in foil and grill (turn often to not burn the butter) oh man. heaven. on. the. cob. :
I love berries too. I'm planning a trip to our local farm for some berry pickin this week! DH and DD prefer raspberries, I love blueberries. I want to try making my own fruit popcicles with berries... Any tips, ideas? I was thinking to puree them up and maybe add some kind of juice for sweetness & liquidness (? new word!) or maybe coconut milk or yogurt for a berries n cream effect?

Homemade french fries with apple cider vinegar drizzled on top
Summer squash fried in bacon grease/lard
Salads with berries and cold chicken/turkey
Chocolate milk popsicles or smoothie popsicles
and of course...s'mores

frozen watermelon popsicles-- just take a slice of watermelon, stick a popsicle stick into the side of it, and lay it on waxed paper on the freezer until it's frozed. Yum!!!!! Messy, though....

We love to eat corn somewhat like this. . .we had it once at a farmer's market and have been hooked ever since. What we do is grill the corn a little after it's cooked just to get that grill taste, then we dip a lime wedge in a mixture of cumin, cayenne, and salt. . .rub it all over the corn. . .OMG, super totally yummy and I know it's blasphemy coming from someone from Indiana. . .but no butter is necessary:

My favorite summertime foods: pretty much anything on the grill. . .grilled meats, fish, kabobs, grilled veggies (we do a lot of foil wrapped veggies on the grill), grilled veggie/portabello mushroom sandwiches, grilled fruit. . .yeh, I'm drooling now. I love fresh tomatoes and will eat them daily, with just salt and pepper, with mozz cheese/balsamic/and olive oil, filled with cottage cheese. Fresh green beans just steamed with a little olive oil (or butter) salt and pepper. Any fruit while it's in season. . .especially peaches (these are my fav, but unfortunately here in Japan they aren't yummy. . .they have no flavor. . .only thing I've had here in the produce dept that I haven't liked more than in the states--and wouldn't it figure that it's my favorite food).

Mmmmmmmmmmm tomatoes. I think tomatoes are my favorite veggie. (Ok ok I know they're a fruit but... come on!)

My grandfathers favorite way to eat garden tomatoes was to cut the tomato into wedges in a bowl, cover in cream and a dash of pepper and salt. (It's really yummy, try it some time.) :

tomatoes+salt+pepper= wonderful deliciousness!! That's how we eat them here!:
