Colcannon recipe--delicious!!

I just made this recipe--very yummy!

by the way, does anybody know how to correctly pronounce "colcannon"?

Can you describe what kind of cheese "Kerrygold Dubliner or Blarney Castle Cheese" is??

MMM - I love Colcannon! Pronounced pretty much as spelled. Col-CAN-uhn I guess!

I know Kerrygold Dubliner is a Cheddar type cheese and I think the Blarney stuff is too - I always use cheddary ones when I make it.

(Irish person here, so I LOOOVEE Colcannon - in my blood!)

Apparently the blarney castle cheese is "similar to a young dutch gouda" and dubliner is "similar to cheddar; and nutty, sharp and sweet" according to the kerrygold website. I tried the blarney castle one once, and it was very creamy and tasty!
When I made colcannon today, I just used some raw milk cheddar and mottzarella (basically what I had on hand ) and it still tastes great!
