DH is really digging his heels in on this issue. He claims that we're not eating fried foods 3Xs a day, so what we do cook with it is no big deal (but given that we cook pretty much all of our food at home, I feel like it all adds up and I'd rather just not heat it at all when given the choice). Our veggies are being roasted in sunflower oil as we speak, had I done them they'd be in butter and bacon grease and the fact would be kept on the down low. DH is really quite anti-animal fats.
I want articles which are peer reviewed, with chemical equations and the real nitty gritty of it. I've searched academic journals but get much too broad of hits and have yet to find one that really adresses the issue I'm looking for- know of any good ones?
