Favorite Recipe for Breads to Freeze? (Muffins, etc)

Last week, I had my first ever success with homemade pizza dough. : Now, I didn't make "pizza" with it...but that's not the point!!!

My husband and I really don't have "busy" schedules, but some days...WHO WANTS TO COOK...NO ONE!

So I would love to make some doughs/breads/muffins that can go into the freezer and come out ready to use without too much extra work.

Do you have a favorite?

I make double batches of these and freeze. I take out a few in the morning (or put them in lunches during the school year) and they defrost in an hour.


Stealthy Healthy Muffins

1 cup white flour
1 cup whole wheat flour
1/3 cup wheat germ
1/3 cup flax meal
1/2 tsp salt
2 tsp baking powder

2 eggs
1/3 cup brown sugar
1/4 cup vegetable oil + 1/4 cup applesauce (original recipe called for 1/2 cup oil)
1 tsp vanilla

1/2 cup (or more) chopped nuts
1/2 cup (or more) raisins
1 cup finely grated carrot
1 cup finely grated zucchini

Mix dry ingredients.
Mix wet ingredients.

Stir raisins and nuts into dry ingredients
Stir grated veggies into wet ingredients.

Combine

Bake at 350 for 20-25 minutes.

When my kids were little, I made these in one of those 24-muffin mini-muffin pans (hence the name "baby muffins" which we still call them). Now I use a regular sized muffin pan, but I only fill the cups halfway or less. I don't want these to be super big muffins - nor would they be, loaded up as they are.

After baking, cool then pop in a freezer bag.
