help me w/soup

i've never made soup without following recipe before--but i have newly made yummy chix broth and ground turkey to use up.

so i thought i would throw in some celery, carrots, some green beans, pinto beans, maybe lima beans...onions and garlic, too, of course

what am i missing? what do i need to know?!

Sounds good! There's not a whole lot you can't do with soup.

My personal preference is to sautee the onions, carrots, and celery in a little butter or oil, then add the broth and chicken to that. If the beans are presoaked/cooked they can go right in with the broth too.

: Excellent advice above!

Do a nice small dice on the veg and it will cook quickly. If the ground turkey is not yet cooked, start by browning that, adding the garlic, onion, celery and carrots when the turkey is almost done browning. Saute until the veg starts to soften. Add the broth, other stuff and boil for 20 minutes until the veg is really nice and soft (or longer if beans are dried/soaked).

Green beans - add near the end so they don't get too mushy.

Taste often and add seasonings as you wish. If adding dried herbs, do it during the saute step. If adding fresh herbs, do it right near the end.

I also really like some greens in my soup (spinach, kale, etc.). Chop them up and add them about 30 seconds before serving so they're wilted but nice and fresh!
