Bread - is it much good for us?

We and the people we know, seem to eat a lot of bread. Sometimes as toast for breakfast with honey or jello on, most days as lunch for a sandwich, and sometimes/occasionally we have some with evening dinner meal aswell.

What attracts me to it, is that bread is filling, and you can get all different types of breads, plus make lots of different sandwich fillings for it -so it never really gets boring.

But, should people really be eating bread every day? Is it good for us? How often does your family eat it?

We really try to stick to the "All things in moderation" theory.

And we never have it along w/dinner unless it's a holiday or we are having soup.

I feel really good about the homemade bread my family eats - 100% whole wheat, freshly ground, long-rise bread. I feel okay about eating it for lunch every day, and occasionally for breakfast. If you think historically, the variety that we now have available to us is quite recent. Our bodies can handle a lot of repetition, as long as it's whole food based. If you're worried, you can make your own.

There's a lot of information out there about acid toxemia, which is a condition your bodies gets into when you have too many grains that aren't sprouted. I remember reading in a medical study somewhere (I read a lot lol) that they pinpointed in history when diabetes developed in humans - it was right around the time that we started growing our own grains (maize, wheat, etc.).

Moderation in all things! I definitely don't believe grains should be on the bottom on the "pyramid", but a little healthy stuff won't hurt you.

My grandma has diabetes and diverticulosis - she always eats a lot of bread. It depends on who you are. Be sure to get lots of fiber from fresh fruits and veggies!

I make my own fresh ground spelt bread so that it is lower in gluten, and even with that I would say it shouldn't be eaten more than once a day at most. Grains (not just bread) are tough on the body, so eating them at every meal is definitely an overload. I make sure I balance them with a good amount of fat (raw butter on the toast for instance) to help my system out.

I don't see anything wrong with eating bread on a regular (even daily) basis, as long as its whole wheat/whole grain (ie, not made with white flour). White bread though is definetly 100% utterly useless and just empty calories - and is basicly the same as eating sugar.

I have pretty much cut bread out of our diets, but that's because I'm trying to loose weight! No one seems to notice.

When I do bake bread, it's whole wheat, with an 18 hour rise, or whole wheat sourdough with an equally long rise.

The long rise ferments the dough, doing much the same as soaking, helping the bread become more easily digested. (And oh so tasty! The long rise develops such beautiful complex flavors. Oh and I don't have to knead it either! )

I try to limit our grains to once or twice a week, and have limited bread to once or twice a month. Health-wise, that has done wonders for the both of us. Our bodies were not built to digest large amounts of grain - but the advent of agriculture altered our eating habits drastically towards ingesting more grain and less other stuff, to our detriment.
