Drying herbs?

I have more dill than I know what to do with! Do I need a special dehydrator to dry it to use later, or is there an easy way to dry it? I feel like I should be able to just hang it to dry like I did with flowers, but I don't know if that would really work.

You can definitely just hang it in a warm dark spot and let it dry. If you want it to go a little faster, you could also place it on a screen in your car - on a sunny day, it'll be dry in no time. You could also freeze it instead of drying it - frozen dill tastes almost as nice as fresh.

I prefer to freeze my herbs rather than drying them - they keep their flavor better. This is especially true of tender herbs like dill, cilantro and parsley.

With dill, I chop it up and pack it into an ice cube tray, fill with water and freeze it that way. There are very few recipes that would be ruined by an extra Tbs of water added in.

also read last night you can heat them on a baking sheet in the oven with the door propped open slow and low for 45 min at a time. When you think they are dry enough, put into a sealed jar if you have condensation in the morning repeat the drying in oven.
