Help - what do I do with all these figs?

So the figs on our tree just ripened, and there a ton of them. They are the green figs, not the dark brown figs. What do I do with them? They're delicious, but I can only eat so many.

Can you use green figs in place of black figs for those kinds of recipes?

I just did a google search and seems to be preserves and jams are popular. I did see some mention of putting them in things like pancakes etc.

Eat em!

Put a sign in your front yard "figs for sale". I keep my eyes out for those signs this time of year.

Fig preserves, fig sauce for ice cream, and mostly, fig preserves. I can never get enough.

My maw maw used to make fig preserves. They were so good on pancakes in place of syrup or on biscuits... OMG, they were good.

Considering the fact that figs don't last, and they're expensive, I'd go with SELL THEM, too.

At $5/pint, why not?

If I had a tree though, I'd be making fig jam.

I had a wonderful dish at a Spanish restaurant once that involved roasted or grilled figs and grilled sausages. the figs were soft and almost carmelized on one side. I wish I had a recipe for this!

How about pairing fresh figs with a nice cheese and a salad and a white wine for a simple summer dinner?

I'd say make some fig preserves and maybe try to dry some for winter.

dried are yummy.

I've made chicken breast with figs before, it was yummy...

our Co Op sells them for 5+ / pint....tried the green yesterday, they are yummy....we are selling those for more than the brown...

I like the preserves idea too...

I have no idea if you can substitute green and black figs in recipes. I've never actually even seen a fresh fig, but I've been seeing Fig Newtons in the store lately and they've been looking so good!

Well, if you're just looking for ways to use them, rather than use a lot of them at once...

Quarter the fig from the top, leaving the base intact so it opens out like a flower. Stuff it with a piece of blue cheese, and reform it. Pop it in the oven and roast it until the cheese is melty and the fig is caramelized a bit. Place it on a bed of arugula and drizzle the whole thing with some honey and maybe some toasted pecans. Delicious.

cristeen-that sounds soo good! i love figs and wish i got to eat them more.
i made the fig not ins from vegan w/a vengeance and they are SO good.
