AHHH! What happened to my cake!

I have made this basic yellow cake at least 5 times in the last year. Today I made it and it came out really weird. When I took it out at 30 minutes to check it, it was still pretty runny in the middle so I put it back in. At this time I noticed that it was MUCH puffier than usual. I baked it maybe another 5 minutes and took it out. I just checked it out and it is all shrunkened and shriveled up like an old lady What happened? Is this thing going to taste bad? Is it likely dried out? Thanks!

Not sure but this happens to me from time to time too.

How does it taste? Is it ok or not so tasty?

Taste-wise, it should be fine. Cover it in frosting or whipped cream or even chopped fruit and no one will notice the shriveled appearance.

First guess is you overbeat it. It happens.

I was wondering about the over beating. It said beat for 3 minutes, and I usually do that and did that today. Perhaps for some weird chemical reason, that was too much today. It is really humid here today, perhaps that was the issue. Thanks, I am glad to know it will taste ok, now I won't have to make another one!

Well, if it tasted dry, you can always pour some caramelized condensed milk over it. Kinda tres leches cake-like.

1 cup milk, 1 cup evaporated milk, 1 can condensed milk. Put the can of condensed milk over a burner, unopened, medium heat. Flip over a few times for about 15 -20 min. This will darken the cream & caramelize the sugars. Mix these three together, taste, and if you want it a bit sweeter add some honey/brown sugar/sweetener. Poke cake all over with a fork. Pour mixture over cake & let it absorb. Should be ready in 30-1hr. MMMMM. You can also do something similar using coconut milk if you have allergies. Sooooo good!

You could also mix up some jello with a bit more water to make it softer. Poke holes in cake all over & pour on. Place in fridge until absorbed. Not very 'healthy' but very yummy. Both add moisture to the cake.
