What's for Dinner in July?

I always enjoy the "What's for Dinner" threads in N&GE, but couldn't find one for July, so I thought I'd start one!

Tonight we had vegetable beef soup from the crockpot. I used a lot of veggies from my father-in-law's garden, including cabbage, zucchini, yellow squash, and onions. I made a big batch... we had my parents and the in-laws over to enjoy it with us, and I still have a little bit left over.

So... What did you have for dinner?

Tonight:

ginger glazed pork chops with baked rice and layered salad

Tomorrow:

Chicken cesear salad

Last night the boys had homemade pizza and dh brought home sandwiches for him and I.

Tonight is hamburgers, baked fries and pasta salad.

Tonight we had tacos, cucumber slices, and corn. Not too exciting but it is one of the very few things that everyone in my family will eat!

We had tacos last night too!

Tonight I think it will be some kind of pasta with zucchini and peas from the garden.

Just did our meal plan for the week -

Tonight - whole wheat/flax spaghetti w/ homemade marinara sauce made from our garden tomatos.

Tues - mini turkey burgers with pepper jack cheese & avacado, sweet potato fries on the side.

Wed - Make your own taco salad night (my personal fave!)

Thurs - Shredded BBQ chicken on whole wheat buns with roasted broccoli & carrots on the side.

Fri - we are leaving at noon to go on vacation - so no meal planned.

Tonight:
Salmon in parchment (with herbed butter and lemon), beer braised arugala, heirloom tomato on the side

Tomorrow:
probably leftovers if there is any left :

Tonight DH was working late, the kids had leftovers, and for myself I baked a potato and stuffed it with cottage cheese and green onions.

Last night we made carne asada tacos (we marinated the meat overnight, then grilled the tortillas, the onions in the marinade and the meat. . . with crockpot pinto beans and homemade mango/tomato salsa. Tonight we are having grilled salmon, grilled corn on the cob, sliced tomatoes from our garden, and probably quinoa or rice.

right now, I'm really digging salad, so tons of salads. yesterday, salad (with veggies, sprouted mung beans, and cheese) and bread. today, salad and bread and sauted squash. there was supposed to be a salmon cake, but it failed, so there was crumbled salmon in the salad instead. tomarrow is lentil salad I think. the day after might be stir fried heart and cabbage? and then hamburgers, dilly beans, and salad. saturday we are having soaked quinoa salad with veggies. really craving veggies atm. been having salad for lunch too.

We ended up with chili dogs last night since dh cooked.

Tonight is chicken strips, roasted potatoes, zucchini and onions.

We usually eat around 6:30pm - but you can come early if you like and help ds and I cook!

Yesterday we had chicken breasts marinated in some mango chutney and curry powder, then grilled. Also some coconut rice and steamed broccoli on the side.

Today will likely be crab fettucine - just those imitation crab flakes in a sauce with some sauted onion, cream, and parmesan. Nice and easy. Probably a salad also.

Last night was okra, corn, tomatoes, and andouille over rice. We had squash (zuchinni and regular) and cucumbers in vinegar on the side.

Tonight is going to be Asian chicken salad. That old covered dish standby--cabbage and Ramen--with chicken added to make it a main dish.

Last night we had roasted chicken drumsticks, pasta and steamed veggies.

Tonight dh and I are eating out since we're headed out of town and the boys will be at grandma's.

Tonight I haven't decided yet...maybe black bean soup. Mmm.

Yesterday we grilled tomatoes, roasted peppers on the grill, grilled some onions, grilled zucchini, grilled portabellos, roasted garlic on the grill, then threw on some french bread loaves that were brushed with olive oil and grilled those. Then we sprinkled feta on the bread, loaded it up with the veggies and ate those for dinner--super yum!!!!!!

tonight dp made stuffed zucchini with GIANT garden zucchini and stuffd them with walnuts, pine nuts, spinach, onions, garlic, manchego, and i'm not sure what else. and herbed rice on the side. it was so amazing. i'm pretty sure i ate too much!

tomorrow i think we need to finish off leftover paella. boring.
