Simple Healthy breakfast foods for 1 yo

Wondering if anyone has some suggestions on cookbooks (not vegan only) so I can start experimenting more with my 1 yo. I'd love to give him some pancakes with fruit, is syrup ok at this age? I would love a healthy recipe to make some and which grains I should begin with, he has not had any.

Have you ever read Nourishing Traditions? It's not my favourite cookbook for recipes but it has lots of good info. I think any grain is okay for pancakes but soaking the batter overnight will make it more easily digested and is worth looking into.
I think syrup is okay, but your ds won't miss it so you might not want to start offering it yet just because it's a lot of sugar. I don't think a little bit of it would hurt though.

Yes I have that book but the recipes are too difficult in terms of gathering the ingredients and figuring out subs for the butters/milk. DS has a soy/dairy intolerance so I can't use most of those recipes.

Also, what about juice? I read its bad, even if its organic apple? Just curious. I give him a sippy full of water which he sips throughout the day and the other day put a spalsh of it in there and he seemed to suck the water down that time.

You could do a regular pancake batter, using rice milk or whatever alternative milk you use. If you put bananas or blueberries in them, you don't need a syrup. It's pretty sweet.

are you vegan?

i would leave off the syrup - just because it is really unnecessary. i sometimes substitute syrup for sugar in recipes or bread, but don't put it on dd's pancakes. she loves blueberries in them, though!

yogurt with fruit or granola or plain.

scrambled eggs with veggies is something we eat alot.

whole grain muffins with fruit in them.

toast!

still unclear about if you're vegan though, so this is potentially unhelpful!

Another great book suggestion is Real Food for Mother and Baby by Nina Planck. She has lots of great suggestions for feeding babes.

I make Ian multigrain waffles. They're very good. It's a recipe from allrecipes.com. It has a lot of ingredients, but it's pretty quick to make. I freeze what's left, if there are any, and pop them in the toaster later in the week. There's milk in the recipe, but I should think you could substitute what ever milk substitute you prefer.

I also make a whole wheat pancake. There is butter in that recipe. I don't know if there are butter substitutes?

Ian eats whole grain muffins. I have a yummy applesauce sweetened flax muffin that he likes.

Fruit and yogurt.

French toast.

I wouldn't do syrup. No reason for a baby. I also wouldn't do juice as there is also no reason. Water and your milk is all he needs. As soon as they have juice, they want it.
