Canning gluten/seitan/wheatmeat.

Anyone ever tried canning seitan? I can't seem to find instructions anywhere.

I'm wondering if it's not safe for home canning? I'd love to do a bunch if it's possible

I know I've read about freezing or the refridgerator but in my cookbooks even the oldest known origional author using wheat meat there has not been any freezing instructions! something I've always wondered about too. I would think since it is not a animal product and can be frozen/fridgerated that there should be a way to can it!? I emailed Kerr and asked. Let me know if you find out.

you should be able to can it since mock duck seitan is canned.

The seasoned gluten is then packed in jars which are placed in a large pressure cooker (retort) and cooked for a specific time to ensure sterilization.

What would the time and pressure be? I can't find the anywhere. Finding this out would be incredible.
