I have not trialed other types of milk right now he is still getting breastmilk so we're ok for now. I don't want to introduce rice milk or anything either. The only milk he HAS safely consumed is coconut milk, would this work in place of milk?

Pancake recipes with NO milk, eggs fine

my firend has a recipe that makes pancakes with orange juice - something like this one =
2 cups Flour
1 tsp Salt
2 tsps Baking Soda
1/4 cup Sugar
2 Eggs
1 3/4 cups Orange Juice
1/4 cup Butter, melted
Mix dry ingredients. Beat eggs, then add orange juice & butter. Mix well. Add to dry ingredients. Spoon onto hot greased griddle. When bubbles form on surface, flip. Cook until browned on both sides. Serve with Orange Syrup (recipe below).
Orange Syrup
1/2 cup Butter, melted
3 tbsps Cornstarch
2/3 cup Sugar
1 oz Orange Zest
1 pt Orange Juice
Melt the butter with the cornstarch for 1 minute. Cool. Heat juice and add. Stir until thickened. Add sugar. Bring to boil. Simmer 5 min. Add maple syrup to taste.

Yep, I regularly make pancakes with just flour, water & baking powder & they turn out fine, if you can use eggs or coconut milk that would probably make them even better, but milk definitely not necessary!

I just use the coconut oil and flour I can find at my local grocery store. I love cooking w/ coconut flour as it is so high in fiber and grainless...I also want to second the Sue Gregg blender batter method--it's totally awesome and TF!!

1/4 tsp salt
cinnamon to taste (I use 2 tsp)
1/2 cup oil
2 cups plus about 2 tbsp milk, milk substitute, or even just water
I mix it up with 2 cups liquid first and then add just enough additional liquid to get the texture I want.
