What do you keep handy for quick, healthy meals/snacks?

I am completely stuck for ideas. I'm attempting to make a grocery list, and having the worst time of it. I've got dinners down ok, and breakfast is easy enough, but lunch and snacks are killing me! We eat our big meal in the middle of the day, as DH works at night. So our 'lunch' meal is at dinner time. Since its just me and the kiddos (and I'm nearing burn-out after a long day), I usually make something simple. Actually, I usually just eat cereal or something equally as lazy, but I make something for the kids. They like when I make them a 'tray' of various foods, sometimes I'll make sandwiches, bagel pizzas, frozen chicken nuggets, Annie's mac & cheese. They usually snack on fruit, yogurt, fruit leathers, generic pirate's booty. Thats all I've got, and it bores me to tears. I'd love to stock up on ideas and foods that are easy to make, and healthier than bagel pizzas Any ideas?

What about hummus or other dips and veggies/pita breads? Mini sausages, Salsa/guac & corn chips/tortillas, spanish omelette, savoury muffins, mini fish cakes, falafel, french toast.

That's all that springs to mind at the moment but will come back if I think of anything else.

Fresh fruit and veggies are big for snacks at my house, and yogurt. Other ideas are sandwiches with different spreads. You can make sweet potato, avocado, etc spreads. Grilled cheese sandwiches with kale, tomato, onion, pepper and garlic are yummy. Whole wheat crackers. Bagels with different toppings.

Snacks here usually involve cheese, veggie and dip, fresh fruit, nuts or sometimes hard-cooked eggs. Something a little more substantial might be fruit and yogurt.

Quick and easy snacks we usually have on hand are frozen or fresh berries, bagels, whole wheat toast with peanut butter, chips and salsa, chunks of cheese, cashews, homemade granola bars, crackers, pita and hummus, homemade cookies or teabread, and air-popped popcorn with apple slices. Just to name a few. I am kind of a snacky kind of person and so is DS. We're always looking for new ideas.
