Help me make supper!

I have no idea what to make tonight.

I have about 6 patty pan squash that really should be eaten very soon. As well as a quart of plain yogurt that is nearing the end of its days.

Other than that, pretty much, I have some of everything. Any grain, any meat. I have potatoes, napa, bok choy, zuchinni, yellow squash, onions, corn, beets, and I think that's it for veggies.

Stir fry?

Squash gratin? Or squash casserole?

Here, when I have a ton of veg to cook in the summers, I make what we call "country dinner": three veggies and a pan of cornbread. That's what I'm making tonight, with skillet corn, purple hull peas, and cabbage. I'll serve it with pepper sauce, slices of garden tomato, and fresh onion.

I also like to throw a ton of veggies into the pan, saute them, add some meat (or not but hubby prefers to have meat too) and tomato sauce or marinara and serve it over pasta.

We had veggie lasagna (chard, eggplant, zuchinni) 2 nights ago and stir fry (napa, bok choy, squash, zuchinni) last night.

I think tonight is going to be a veggie plate--we like those, too. I wonder if dh will notice that we haven't had meat for 3 days in a row??

Use the yogurt as a base for curry sauce, braise all your meat and veggies in it, and serve over rice. Yum!

We ended up with black eyed peas, squash (just regular ole' sauteed), baked potatoes, and boiled, buttered beets. And bread. Boring, but it worked.
