help with allergic colitis please- info/articles?

I don't have a ton of time (LO is napping but naps are short LOL)
so he has allergic colitis to dairy and soy (in MY breastmilk) he gets blood streaked mucous but his dipes are often mucousy even though Ive been dairy/soy free for months. Today I changed a very bloody diaper (like the blood would cover the surface of two quarters) and I know he got into my DDs hummus yesterday and it has soybean oil in it- so I am guessing that is the cause. really my question for those of you who may be well researched in this area is *why* does this happen- what causes allergic colitis or what is really happening in his gut? are there links/articles anyone could direct me too? I am just getting nervous about this b/c he's 10 months already and the reactions seem to be getting worse not better. I am a vegetarian so ED is not really an option right now plus he seems fine if I stick to the soy/dairy free diet. I just don't know- maybe it's something else? We were to the Ped GI and he wasn't concerned. Any ideas?

There are a TON of interesting links and threads that JaneS put together. I've re-read several of those threads multiple times, more the ones that apply to us (different issues) than what you're asking about though.

I think there should be plenty to read there (would take days to go through it all, I assume you'll have to pick-and-choose to some extent) and then see if it's what you need.

My DD has the same problem as diagnosed by the GI (who, in my opinion was NO help to us). The blood isn't always visible, but the mucous is ALWAYS there. To some degrees it changes, but it never goes away. I have been on an ED since she was 7 weeks old and she is now 23 weeks.

I have found some triggers, but we are still working on it. It is a very very very slow process for us.

I'm very eager to see what other people have to say as i'd love some links too.

An ED is totally possible on a vegetarian diet. It's not so much using the exact diet that Dr. Sears mentions, but finding things that will work for you.

There are a few vegetarian/vegan mamas who have been on ED/TED over at kidswithfoodallergies.org... I suggest you check over there.
