non dairy ice cream--happy update

Ok, I was going to make some coconut ice cream for my lo, but as my other thread said, I am pretty sure coconut failed this morning I really want to make her some ice cream. I know I can make her sorbet and that might be what I have to resort to, but I am wondering if there is any other choice out there? She drinks hemp milk and that is what I was using for the milk portion. For the cream I was using the coconut milk. She can't have soy. My non dairy ice cream cookbook has some frozen yogurt recipes, but I haven't ventured into making her hemp yogurt yet. Sheesh, I was really looking forward to getting some high fat food into her. Ok, back on task, any other ideas for making ice cream? Probably not, but had to ask.

Is she okay on white potato and corn? If so, you might want to check out a product called Vance's Dari-Free... there's a recipe for a dairy free "ice cream" using this product that gets rave reviews.

Thanks for the suggestion, but right now we are avoiding corn and nightshades because we suspect them.

Ok. Here's something you might be able to try. Maybe sub the 2T coconut oil with palm shortening or something else.

On another list we've had alot of talk of (chocolate) ice cream, so I decided to make this recipe this morning in advance of a party tonight. I think it will be a hit...sure was yummy coming out of the Vitamix! The recipe suggests it as a mousse or even as frosting (I was pleasantly surprised at how thick and dense it was). And I know on this list people are always looking for cake frosting recipes. My musings are that you could freeze or definitely chill for an hour and create a nice cold treat.

My recipe
2 small ripe avocados
3/4 C agave nectar
1/4 C cocoa powder
2 T coconut oil
1 T vanilla

I adapted my recipe from http://www.purelydelicious.net/mousse.htm

I haven't tried it but it looks interesting.

Thanks, but she is allergic to avocados as well. I guess I should list all things she avoids Dairy, wheat, eggs, soy, peanuts/tree nuts, bananas, avocados, nightshades, corn

Well, I'd say rice milk but there are at least three different "arsenic in the rice milk" threads going right now.

So, the hemp by itself won't work because of the fat or cream issue? Hmm...Can you do chocolate? What about cocoa butter?

I don't know about just using the hemp milk. Maybe some experienced ice cream makers will step in and educate the uneducated (me). Of course without the fat it won't be as creamy, but can it still be ice cream?

I do have some hemp yogurt in my yogurt maker (first time I am trying) and hopefully that can make some frozen yogurt for her.

The gluten free goddess blog has a recipe for hemp milk ice cream (maple roasted banana no less!). She uses olive oil to add the extra fat (I'm guessing any safe oil would work). Sounds totally yummy, I just need an ice cream maker now!

I just made some tasty non allergen ice cream for my 2 yo : I used this recipe as a guide http://thenondairyqueen.blogspot.com...t-oatmeal.html

I used hemp milk in place of the soy milk, regular oats in place of the quick oats (it is what I had on hand), used regular white sugar, left out the Truvia, tapioca starch in place of the arrowroot, left out the vanilla extract, and added a little less than 2 cups of blueberries. I cooked it on the stove until the blueberries got soft and I felt the oats were good and cooked. Otherwise I followed the recipe. I am excited to try other flavorings

I tried to make hemp yogurt yesterday. It tastes like yogurt, but is no thicker than the hemp milk. I will use it to make some smoothies for her.

How have I missed this?? Can someone fill me in, rice milk is what both of my allergic boys drink! Never tried hemp since it seems like it's made from the seed and ds is allergic to every seed we've ever tried or tested him for! :

Try using agar, gelatin (if you can do gelatin) or a safe starch as a stabilizer and it you should get a thicker, more yogurt like result.

I've been making coconut milk icecream successfully

I just use straight coconut milk

then add agave syrup or whatever sweetener you like will work just fine

then flavour it as you will - chill until it's cold and put it in the icecream maker.

I've made vanilla by just adding regular vanilla, or to be extra decadent I used vanilla bean.

I've made chocolate just by adding cocoa, and a bit of vanilla too.

I made cherry - cooked up some cherries to release the juices and thickened with arrowroot and then whizzed it all together and into the mixer it went.

Strawberry was really good too

The possibilities are endless I've tried adding guar gum, but honestly it was just as good without ,so I don't bother now.

The OP said her LO reacted to coconut milk.
I have to check out some of those other recipes. We're dairy, soy, tree nut/peanut, and coconut free here too. Haven't tried hemp yet (difficult to find here and VERY expensive when we do find it) and can't find a good source for Dari-free.
