Beets are bolting

Does anyone have any idea what to do to beets that are bolting?
I was thinking about pinching back the part that is going to seed.
Any ideas?

I'd probably just let it finish going to seed and collect the seed, honestly. Usually when something bolts or goes to seed it's taste is going to be a bit off than from before, but maybe beets are different...

couldn't tell you, my beets have never bolted & we leave them in until Sept-Oct.

you can cut down the leaves though & eat them(not once they've bolted). You'll want to protect the beets & cover them up again though.
