That's a lot of cake!! I wish DS could have eggs, because a lot of the gluten free cakes rely heavily on the eggs to keep them together. I want to try sooooooo many of these.... DS will be gone next week. I could try a new one every night...

LOL, Jacqueline! Glad to be of service. I made the Everyday Carrot Cake into cupcakes and the baby doesn't like them. Not sure what that's all about. He doesn't like carrots in general, but I thought he'd go for cake.

Kathy, I know what you mean about the eggs. I'm going to try another recipe using gelatin to see how it goes. Can you do a gelatin sub? OH, and how is that cake gum (can't remember what it's called) working out?

The karaya gum is working just fine as a gum sub. And that Great Lakes gelatin (pork) is awesome as well (I'm still working through my sample -- haven't even had to buy any yet!). It's just that a lot of the gluten free cakes use like 5-6 eggs and that's pretty hard to replace. One or two isn't so bad...
