Help me love mustard greens!

I've been harvesting mustard greens from the garden, and still haven't found the right way to cook them that makes me want more more more. Right now I'm choking them down, whereas every single other green I've ever cooked has me drooling.

How do you cook your mustard greens? (dairy-free, please!)

I like to cut up half a pkg of bacon into small peices and cook them till they are almost the way I like them. (I don't like bacon really crunchy, still juicy) Then I add the mustard greens and 1/4cup of white wine mixed with chicken stock and some minced up garlic and onion, cook for 10 min ish. Sometimes I throw in some cheese sometimes not. I bet these would be good creamed like creamed spinach. Yum. Also I bet they would be good as a base for baked eggs. mmmmmmmmmmm!

I like to throw them into a bowl and cut them up with my kitchen scissors and then add the shredded greens to casseroles, stirfries, quiches etc.

Also, try adding them to a salad. I like to mix mustard greens with spinach (about 1 part mustard greens, to 2 parts spinach.)

Apparently you can make some yummy greek yogurt dips (sort of like spinach dip but mustardy and peppery) I haven't tried it yet, but plan to for the next bbq I go to!

Editing original post to mention that we're dairy-free right now. Thanks for the ideas so far---any others out there?
